Cake... in a MUG!
Hai! Here is a simple sweet snacks to try and it is a mug cake!

2 tbsp Flour 1/4 tsp Baking Powder 1 - 2 tbsp to taste Pinch of Cinnamon (optional) 1 tbsp cocoa powder 5 tbsp Milk 1tbsp Oil
Microwave for 1 minute! And then done. 
This recipe I found has been my favorite quick recipe whenever you are craving a chocolate cake. Cake Mug has been popular over the years and this recipe is one of the simple mug cake recipe, bonus point is that it is eggless. All you have to do with this recipe is that you need to mix all the ingredients together in a microwave safe mug and then microwave it for 1 - 1 1/2 min. 
And this is the end result...

It is a bit messy and not that presentable but let me tell you, it was delicious! You can top it off with nutella or you can add nutella in the mixture too! To make it more tasty and sweet.

Bake A Cake!
WARNING! This is my first time and I haven’t receive my cake tools and so, I am short in resource :’)

I tried to bake a cake for my boyfriend’s birthday (spoiler alert: I failed, miserably) Let us just check out the rest...
For Cake
2 Eggs 50g Sugar 15g Unsalted Butter 15g Oil 1tsp Vanilla 60g Plain Flour (for chocolate cake: 50g Flour + 10g Cocoa Powder) 1tsp Baking Powder
For Buttercream
250g Softened Butter 250g Powdered Sugar Pinch of Salt 2tsp Vanilla Extract 2-3tbsp Milk
So, first for the cake, you need to whip the eggs and sugar together for a total of 3 to 5 minutes until its texture looked shiny and create a slight peak if you pull the batter up. After that, put in your butter, oil and vanilla together and then mix it until all combined. Lastly, put in your flour and baking powder, make sure you fold it but be careful not to let the air out too much so do not over mix!
After all are ready, bake it into a two lined 4 inch tins with 170° for 20 to 25 Minutes. 
While waiting for the cake to bake, you can get your buttercream ready. I used another tiktok’s recipe to mesh them together into one cake. In a bowl, you need your softened butter, make sure it is soft enough to not create lumps when you mix it! and then put in your powdered sugar with a pinch of salt. Mix them up together, after that put in your vanilla extract and lastly your milk. 
Mix them all together until all combined and produced a soft texture, smooth enough to spread it and decorate it. You can mix it with your choice of color too! (my mistake is that I DON’T have any food gel coloring) 
And this is the end result...

You can now, wash out your eyes :’) 
I WILL DEFINITELY going to redo this again! but with all the resources complete because I was devastated when I selfishly wanted to try this for my special person’s birthday. The taste was okay, but my mistake was that you need to whip the eggs and sugar until the consistency is a bit stiff, not too runny and not too stiff. For the buttercream I would really recommend you to work with your familiar brand of butter because I was in a hurry I picked up another brand of butter that I don’t familiar with and end up with the buttercream more to... oily. 
To be very honest, if I redo this someday, I could really nailed this! Especially putting on colors to the cake. 
Overall:-
Value: 6/10 Taste: 4/10 Difficulty: 7/10

Update on Honeycomb!
Like I said, I might want to try the honeycomb again and with more preparation. (Still lacking in utensils like the shape cutters)  
And here’s the final result!

Feauturing my two brothers who are so invest in the game of honeycomb but they failed though, no shooting of course ! I made the umbrella shape from a tinfoil (my brother made the handle, he didn’t get the memo) and my youngest brother (the one with the blue shirt) kept on pestering me to use his lion teeth keychain for his shape, and we did. It’s sanitize and cleaned of course. 
It was worth the wait and redo! I might want to do it again.

Honeycomb!
Yes, this is the famous honeycomb challenge from the squid game! My little brothers wanted me to make it for them but we lack in essential items, especially the shapes and to be very honest, I might wanted to try again because my result, sucked!

2 tbsp of White Sugar A pinch of baking soda
Yup, that’s it. THAT’S IT!
It is so simple but can be ruined in a matter of second :’)
So basically, you need to heat up the sugar on a ladle or a small non-stick pan until it formed an ember color and from then, remove it from heat because it is easily burn. After that, put in a pinch of baking soda and make sure not to over do it! It could just taste like baking soda and not the sugary stuffs. Stir it until it looks like a caramel and pour it on top of a baking paper and flatten it with a metal surface (or a glassware, I searched and found out it is also can be use) and wait for at least 25 second because if you rush it, you’ll just and up with a messy situation. Lastly, you need to be quick and press any shapes you want on the sugar cookie before it hardened.
That’s it!
So um, I made TREMENDOUS mistakes on this recipe even though it is so simple to do. 
So what I did was the pouring and flatten part. I messed it up so bad! I was so confident and impatient, and end up pressing the sugar with another baking paper and pressed it with a shape that I made with tin foil (I don’t have the cookie cutter :’))

It is actually kind of fun doing this with my little brothers, and it’s challenging too. Like I said, I might do this again and just update the updated version of my ugly hot-mess honeycomb hehe

Sugar Toast

Slice of Breads Margarine/Butter Brown Sugar
This is the most simple recipe and perfect for a midnight snack and all you have to do is to mix equal part of margarin (or butter if you prefer that) and equal part of brown sugar. Spread it on the bread and toast it on a non-stick pan with low heat to get that delicious brown and toasted sugar coat toast.
Overall:-
Value: 1/10 Taste: 7/10 Difficulty: 1/10
I was hungry at midnight and didn’t know what to snack on and then found this simple way for a midnight snack at TikTok, immediately after that, I tried it and it was worth it!

As you can see, the golden melted sugar on the toast was really good and it melt in your mouth too! Give a try when you are feeling hungry and wanted to grab a quick midnight snack.

Biscoff No-Bake Cheesecake
Another week, another…cheesecake?
But first, yes, it is a double update today because I need to catch up with my timeline :’)

1/2 pack Lotus Biscoff 50g Unsalted Butter 250g Cream cheese 2tbsp Biscoff spread 200ml Whipping Cream 1 tbsp Castor Sugar
3tbsp Biscoff Spread (For Topping)
The first thing to do is to crush your biscoff biscuits with blender or food processor or you can just crush it manually (like me) and then with the crushed biscoff, add in the 50g unsalted butter but melted so in can become a crust for the cake. Tightly packed it on the button of your cake pan. After that, mix in your cream cheese and biscoff spread until completely combined. In a separate bowl, whipped your whipping cream and sugar until you get a soft peak.
Slowly combine the two mixture by folding, do not over mix it! After that, put into the cake pan and let it refrigerated for few minutes before you make your biscoff topping.

With the topping, you need to double boil it for the spread to soften a bit.
Wait for it to cool down a bit before topped it off on the cheesecake.
And DONE! I mean, you need to refrigerate it again and I would recommend let it overnight for better result.

The value is a bit high because the spread already cost like $5+ and of course, the cream cheese also a bit pricy but overall, it is worth it. The taste is more leaning to biscoff because of its topping and the bottom crust but the cream cheese still over power a bit since... it’s cheese and lastly, the difficulty is okay, not too difficult but I needed to open the biscoff biscuits one by one tho, because it is packed individually. 
By far, this recipe is one of my fav that I tried and you should too! 
Baking (and a little of cooking) has been my therapy with all this partial lockdown has been commenced. If you ever try this recipe, pls do share!

Churr* All I Need

For today’s recipe is Churros! I’ve run out of title quote for my bakings, so forgive me for the cringe titles.
300g of Water 100g Salted Butter A pinch of Salt 190g of Plain Flour 2 Eggs
Cinnamon Sugar
The first step is to heat up your pan and then once it heats up a little, pour in your water and wait for it to form little bubbles on the surface of your pan (don’t let it boil). Once you got into that state, put in your butter and then a pinch of salt. Stir it until the butter melted completely, and then turn off the heat before you put in the flour. Prepare for a work out because once you mix the flour, it’ll become more sticky but the real challenge is to mix the eggs into the batter but mix it one by one AND real important is, to let the batter and the pan to cool down a bit, you don’t want to end up with scrambled eggs on your churros right?

After your batter is done, you are ready to make some churros! Preferably, you need to have a start tip to make that churros’s classic shape but unfortunately, I don’t have any (Not yet) and so the back up plan is to load the batter into a zip lock bag and then fry it in your ready-heat oil pan until it is golden brown (or just brown)
Then once it is fried, roll it into your cinnamon sugar and then enjoy! with or without a dip.
Okay, to be very honest, I did this very very badly. The taste was okay, but I don’t know why I don’t like what I made…

Okay so, the value was 1 because you can actually find ALL the ingredients in your pantry and that’s actually convinient and the taste was okay, but maybe because I don’t have any cinnamon sugar and also no proper dip to get along with and the difficulty was also low because it’s only require your muscle and patient.
As you can see in the result picture, I … don’t understand why it have bubble texture on the churros, maybe I overheat the oil? or because I don’t have any proper utensil like the start tip to make the shapes?
I am very unsatisfied on this result so I might redo it again but if you do it better that I do, please do share! I need to improve my baking and cooking skills too.

Happiness is... hugs & cheesecake!
Surprise! Double Update on this week and this time it is CHEESECAKE! WEEEE!!

3 Eggs 70g Sugar 1/2 tbsp Ovalette 50g Plain Flour 30g Corn Flour 1/2 tsp Baking Powder 1 tbsp CreamCheese 1 tbsp Fresh Milk 3 tbsp Melted Butter 160° For 20 - 25min
200g CreamCheese 4 tbsp Condensed Milk 1/4 Block of Cheddar Cheese
The first step is to make the cake sponge. Firstly, put in your eggs, sugar and ovalette and whisk it together until all combined and create a soft peak once you lift up the batter a little. I used hand mixer to save some time. Secondly, sift in the plain flour, corn flour and baking powder to the mixture and try to fold it in instead of whisking. Lastly, put in your cream cheese, fresh milk and melted butter to the mixture and this time, you can use your hand mixer or whisk. After that, bake it to 160° for 25 min.
While waiting for the batter to bake, you can ready your cream cheese topping. Mix 200g of cream cheese (any brand but I used Bega) and condensed milk, that’s it! For the cheddar cheese is when you finished assemble the cake.
This is before baking the cheesecake, even the raw mixture looks good already

This is the after result, you can actually see some holes on the cake because it’s the method in order to know if your cake fully baked or not.

MY FAVORITE! I might be a bit biased towards this bake but I am. I’ve been searching for this simple recipe because I’ve been wanting to try to bake it myself and went around on TikTok and a user posted this recipe herself! and fun fact is, she is a Bruneian! I thought she only does food reviews but she can cook too, such an inspiring person. Value wise, you can actually find most of the ingredients already in your pantry, maybe except cream cheese or ovallete. Taste was, of course, 8.5! Maybe I put in too much flour and the cake was a bit stiffer than I thought but I like the texture though. Lastly, it is so easy to make! You can make it anytime and the baking time is estimate 1hr? or maybe less, minus the baking time of course.
If you google this, it is difficult to find a cream cheese sponge cake recipe like this and so this is your lucky day!

Potatoes gonna POTATE
Oops, a late update. Sorry hehe.
But this week (supposedly posted last week) is potato week!

Potatoes (I used 5 Average size potatoes) Corn Flour/Rice Flour Salt Mozzarella Cheese
The first step is to peel and slice the potatoes and then steam it for 20 minutes. After that, smash up the potatoes till it is smooth, then add in your flour (I used Corn flour instead of Rice flour) and instead of sugar, I put in salt and ‘Cukup Rasa’ or also known as MSG. The measurements? Hmm, I just mixed it according to my own taste. When you’re done mixing, roll the potato into balls and then make a dent in the centre to make space for the mozzarella cheese. Make sure the cheese is fully covered with the potato once you’re done adding the cheese and to avoid it over spilled outside the ball. After that, you can either stop there and just pan fry it (like I did) Or if you want to make it more fancy, you can add crumbs outside of the potato balls with an egg and breadcrumbs, and then you just fry it till it looks crispy and golden brown.
I did the pan fry method because I like the natural potato skin taste more than the breadcrumbs.

Value: 5/10 (because mozzarella cheese is expansive!) Taste: 6/10 Difficulty: 4/10
In my personal opinion, value wise on this snack is a bit more on expensive side because of the cheese. I haven’t tried other type of cheese, but maybe you can substitute cheddar cheese for the mozzarella but if you want the stringy effect, use mozzarella. Taste was delicious but I deducted 4 points because it’s more oily than I expected. The difficulty is more than I anticipate because when you rolled out the potato balls, some of the potato residue stacked on the palm of your hands as you make a lot of balls, and it became sticky… and uncomfortable. So I had to wash and dry my hands every 5 balls were made but overall, it is not that difficult to make this snack.
I know this is not a baking, but let’s take a break from baking and post a random recipe episode! It’s to show that there are variety of TikTok recipes that can be found and is easy to make at home.

Feeling ‘Downie’? Bake a Brownie!
Another week, another baking! And this time it’s a simple recipe that you can find the ingredients in your kitchen pantry easily and that is...
Drumroll!!
BROWNIES!

The Recipe: 
250g of Soft Butter 2 Cups of Sugar 4 Eggs 1 Cup of Flour 1/2 Cup of Cocoa Powder 1 Tsp of Vanilla Essence
Choice of sweets ( I choose Oreo of course )
The first step is to soften the butter in order for an easy blending with the sugar next, and then after that comes with the eggs. The next step is to add the flour, cocoa powder and the vanilla essence. Lastly, mix your choice of sweets. You can add chopped chocolate with your brownies batter but I choose to add oreo because that’s my favourite! 
Bake the batter to 180°C in 20 - 25 min. But my oven is a little bit busted, so I baked it around 30 - 35min. The important thing is when you check your brownies, insert a clean skewers into the brownies and if you pulled out a nice and clean skewers than the brownies are ready for cool down but if it’s covered in delicious chocolate goo, than better put it back in and add 10 more min into baking.

This is how the batter looks like when I put it inside the baking pan and it already look so delicious! And notice how the oreos are on top? I put some of the crashed oreos aside after I mix half of it in the batter and once I put the batter in the baking pan, I sprinkle the oreos on top evenly so when it’s done it’ll come out more sweeter. 
Then I put it inside my oven and the waiting game begins.

After 25 min, I noticed my brownies are still a bit gooey inside and when I checked with my skewers, I was right. So I put it inside the oven again and add 15 more minutes into baking. 
And when the oven ding...

It doesn’t look any different with the before picture but you can see the holes I made when I’m checking my brownies on the bottom of the brownies. Let’s review the taste now.
Ramint’s Thoughts:-
Difficulty: 1/10 (It is so easy to make and it’s in cups, so it simplified the recipe) Taste: 8/10 Value: 5/10 (I didn’t know 200g of cocoa powder is a bit on the expensive side)
Overall thoughts, the taste of the brownies was very sweet and a bit leaning towards cakey side. The top is crispy and the bottom is soft and so sweet but one of my sweet tooth friend recommend me to make it more sweeter but I feel like it’s too much sweetness if I add another cup of sugar. The oreos balance out the bitterness of the cocoa powder though. My mistake was I cut the brownies when it is still warm and didn’t cool it down completely so I ended up with the brownies sticking to each other when I stack it up but...

Here is the end product! It’s not my best shot but I’m still learning on how to capture the goodness of my bakings into pictures and might lure you to try some of the recipe!

Its COOKIES time!
The most basic thing to bake (for a beginner) is cookies. It is so simple yet so delicious for snacks and it can be done in less than an hour! How convenient is that?

Let’s get BAKING!!
The Recipe:
250g Butter  300g Brown Sugar 1 Egg 1 tsp Vanilla Essence 315g Plain Flour 65g Corn Starch 5g Soda Bicarbonate Chocolate Chips
First of all, mix both butter and brown sugar together and then whisk it until it is combined, but don’t over whisk it! Secondly, put in your egg (without the shell, obviously) and then your vanilla essence. Whisk it together and then after that, put in your flour, corn starch and soda bicarbonate together and mix it but don’t forget to sift it! We don’t want any lumps in our cookies. Finally, the goodies, mix in your chocolate chips. You can add however the amount you want. Get crazy! 
When the dough are all mixed, we need to refrigerate it for 30 min before baking them (formed in small balls) for 10 -15min at 150°C 
Note: I used cups measurement for the grams because my scale was broken and I don’t have any back up.

After waiting for 15 min, I took out the cookies excitedly BUT!

I burned them AAAAAAA!! 
So I was just analyzing what I did so wrong and then realized that my oven’s temperature was 250°C and I just face-palmed myself for getting a dumb mistake. I adjust it to the 150°C and tried another batch. 
But as I wait for the second batch to bake, I tried the ‘burned’ cookies and it was actually pretty good.

The outside was crunchy but inside was a very soft texture and it was so good! 
After finishing the ‘burned’ cookies, I went to check my second batch and it come out so good! I even forgot to take a picture of it.
But the taste was...

It was not too sweet and not that bland. If you want it to be more sweeter, I suggest to add some more brown sugar to the batter (or it is just my error for using cups instead of grams just like the recipe stated) 
The baking size was okay, but I would recommend to bake it in more bite size to get all the crunchiness inside and fun size to eat. 
Overall, I would rate :-
Difficulty: 2/10 (curse me for not having a scale machine) Taste: 7.4/10 Value: 3/10 (You can find most ingredients already in your pantry)
Overall thought, it was worth it. I now have snacks to munch and it was delicious, until I forgot to take a  picture of the end product! NOOO! 
But I assure you that the end product was worth it.

A little something
About Ramints
Hello and  welcome to my blog! I’m Rafidahtulatiqah (20B0134), a student at UBD, majoring in Design and Creative Industry and currently I’m at my 2nd Year, first Semester. 
I LOVE food and especially desserts. Everyone always has an extra space for a dessert after a full meal, right? Or is it just me? But ever since the partial lockdown commenced, it is very hard to find desserts without fearing to go out and get it in take away (and the urge to spray sanitizer to the food...) and I’ve always wanted to try baking and sharpening my skills, so as a result this blog has created! 
Ramint’s main focus is learning how to bake (might have some random cooking recipes, who knows?) simple, right? 
BUT
The twist to this is I can only follow recipes from the over-popular app, TikTok! The main reason is... it’s TikTok, some even say that they learn more on TikTok than in school, so why not challenge ourselves? 
I’ll be posting on my thoughts, difficulty, value wise and the end product on this blog so you can browse through and when you have the sudden craving for a dessert, you can always look back and try what I’ve tried (with reviews, you’re welcome)
