For those of you who are wondering how the faux “crab cakes”, made with that wild-looking Lion’s Mane Mushroom, came out, they were really good! M said that he doesn’t think they *really* taste like crab, but the appearance and texture were spot-on! So, we found this very cool Lion’s Mane mushroom at the South Miami Farmer’s Market, yesterday. I didn’t know Mike was going to take it apart so soon, or I would have taken a picture of it whole. I hope @urban_oasis_project has more, next week! It feels like the softest chenille fabric, ever! It’s supposed to taste like crab or lobster (which I wouldn’t know anything about, but I guess M will let me know later). I’ve been semi-obsessed with cottage cheese pancakes, lately, and finally took a photo, the other day. I’ve also discovered that they take a cup of fresh blueberries, and can be made with self-rising flour, too! If you use self-rising, omit the salt and baking soda (slide over for a photo of the main recipe).
