Simple Mexican Bowl!
So easy, so tasty!!! Just line a bowl with baked tortillas cut into wedges and fill it with your favorite median fillings! Mine included corn, black beans, avocados, cherry tomatoes, 1/2 a cheese stick, some red onions, and lettuce! I added some lime juice on top and a hint of garlic. Then, DIVE IN!!!

Salmon- the king of fish! It’s full of omega-3s, which can help keep joint pain away and reduce inflammation (much needed for runners)!
I made 3oz of lemon garlic salmon, 1/2 cup of long grain and wild rice, and roasted brussel sprouts.
Preheat the oven to 400F. The brussel sprouts take the longest, so while the oven is preheating go ahead and prepare the sprouts. Half the brussel sprouts, throw them in a gallon sized bag, pour a little bit of olive oil/1 clove of minced garlic/a squeeze of a lemon into a bag, and SHAKE SHAKE SHAKE! Pour the brussel sprouts onto half of a baking sheet and put them into the oven. Save the other half of the baking sheet to place the salmon. Cook the salmon by putting it on tin foil, pouring a bit of olive oil over it, throwing some minced garlic and then two lemons on top. Then, fold the tinfold to create a little salmon pouch and place it on the other side of the baking sheet. The salmon takes about 20 minutes. You’ll know when its done because it’ll be nice and flaky! :) The long grain and wild rice is from a Rice a Roni box (I can’t cook rice, oops).
All of this for just 435 calories, 23 grams of protein, loads of fiber, and 180% of your Vitamin C daily recommendation.

DELICIOUS Healthy Banana Muffins– my FAVORITE recipe! I will admit I like banana bread more, so this recipe is BOMB made in a bread pan. I wanted to add a variety of toppings, so muffins it was!
Recipe from a bit altered from Cookie and Kate’s Healthy Banana Bread. My changes are below, but you can find her exact recipe and directions at...http://cookieandkate.com/2015/healthy-banana-bread-recipe
⅓ cup extra-virgin olive oil ½ cup honey 2 eggs 3 large ripe bananas ¼ cup milk of choice or water (I use skim milk) 1 teaspoon baking soda 1 teaspoon vanilla extract (plus an extra little bit for fun) ½ teaspoon salt ½ teaspoon ground cinnamon, plus more to swirl on top 1¾ cups whole wheat flour
Plus extras if you want, such as chopped nuts, chocolate chips or shaved chocolate, coconut flakes, or fruit! For bread, I mix in the mix ins after the batter is made, but for muffins I just add the extras on top of the batter to be toppings!
