I actually found a Harvard article about this. Here’s an excerpt:
Autistic people are more likely to suffer from gastrointestinal (GI) ailments than the general population. They are especially more difficult to identify and diagnose in adults with communication challenges. GI symptoms can range from mild stomachaches to serious, persistent vomiting. There is no single set of signs, symptoms, or treatments that applies to all autistic patients.
Another article said:

I find this very interesting and kinda annoying too.

Please don’t be rude about somebody’s dietary restrictions.
Sometimes people don’t even notice it in the little comments about how gross vegan food is, how bad for you dairy-free milks are, how everything gluten-free tastes like cardboard…people don’t choose their food intolerances!!!!
I have to use a lot of substitutes for MEDICAL REASONS, and I’ve had people tell me to my face how gross that is. Vegan cheese tastes like glue. Oh, you have to try a gluten free diet? That’s so trendy now, but really you don’t have to. The food is so bland.
I do have to, actually. It’s discouraging to hear how inferior your food is when there’s no other option!!!!! Please try to be considerate of people’s non-negotiable needs.
Also don’t be mean to people who do choose their own dietary specifications, that should go without saying. Be considerate and respectful of what people have to eat!!!

I am feeling SO MUCH better today, no idea why. 😭 I feel like a whole new person again. So much energy!! I had my medication for the past two or three days, but I have doubts that it took this long for it to 'kick in', you know? So I wonder what the trigger was for the pain and inflammation to wane.
Regardless, I spoke with a good friend who experiences chronic illness via inflammatory issues and autoimmune issues, and so do some of her children and other family members. She's well-versed in the world of symptom management via naturopathy, so she made some sound recommendations for me. I'm going to start by adopting an anti-inflammatory diet. It seems the most sensible and least restrictive option, and has a lot of common sense health advice that I think anyone would agree with.
I'm going to suffer so much since I am absolutely obsessed with sugar and baking lol. But I think introducing a strong, stable, whole food diet for a while will have multiple benefits regardless, and if I notice that my symptoms are lessened because of it, great! And if I don't see a change in symptoms, I will talk to my doctor about the Autoimmune Protocol Diet.
The AIP is much more strenuous and restrictive, but it's a very specifically driven elimination diet. And I have a family history of heavy autoimmune disorders. So it is a concern I have in general. But because it's more involved, and I don't have a diagnosis for any of this pain yet, I'm trying not to take any extreme measures of my own. Just looking for relief that's safe, healthy, and within my control and access.
Does anyone have any experience with these diets, and have any advice or tips and recipes they want to share? :)

INTRODUCTION
At present, we do not understand precisely how the SARS-CoV-2 coronavirus induces a spectrum of immune responses in different infected hosts, including severe inflammation in some, or how post-acute infection sequelae come about. In this review, we consider a conceptual framework whereby the virus itself is a reservoir of peptide motifs with pro-inflammatory activity. These motifs can potentially be liberated by highly variable proteolytic processing by the host. We focus on the ability of viral peptide motifs that can mimic innate immune peptides (more commonly known as ‘antimicrobial peptides’ (AMPs)). AMPs (and their ‘xenoAMP’ mimics) are not themselves pathogen-associated molecular patterns (PAMPs) that activate innate immunity via recognition by host pattern recognition receptors (PRRs) but can strongly amplify PRR activation via promoting multivalent PAMP presentation. An important mechanism in the host’s immune amplification machinery and is implicated in a range of autoimmune conditions, including lupus and rheumatoid arthritis, which are among the sequelae of COVID-19. We review experiments that show AMPs and SARS-CoV-2-derived xenoAMP can assemble with PAMPs such as dsRNA into pro-inflammatory complexes, resulting in cooperative, multivalent immune recognition by PRRs and grossly amplified inflammatory responses, a phenomenon generally not observed in harmless coronavirus homologs. We also review the persistence of viral remnants from other viral infections and their association with inflammatory sequelae long after the infection has been cleared.
This is a very technical research paper which will be difficult to read with no medical background. However I did understand enough to make me take notice. The following is a quote explaining the study.
