The Importance of Sea Salt Ice cream
Okay, so firstly, Ik the actual reason it was added to the game series. Nomura really liked the Sea Salt ice cream they had at Tokyo Disneyland. End of story . . .
Or is it?
You see, I believe that the Sea Salt ice cream which is pretty much shown off at every opportunity is incredibly important to the story (I mean, obviously it is, they practically bash you over the head with it) I believe it is meant to signify the bittersweet nature of the events that happen after KH1.
Firstly, when you think of Sea salt Ice cream in KH2, you think of Twilight town. During Sora's rememberance (idk what else to call it) Roxas has an entire fake life he lives in a digitized Twilight town. But even through all of that, he still finds friends.
Let's go back to the very beginning, timeline wise, to Roxas' story. At the start of 358/2 days, Axel takes Roxas to get Ice Cream. Some random "zombie-like" kid that is barely aware of his true surroundings and can barely speak. He has no idea who he is, or even if he is. He's been ordered to go around with these mysterious hooded folks and follow their orders. But even through it all, he enjoys some ice cream.
The Ice cream is called the "icing on the cake" by Axel. That Ice cream is meant as a reward at the end of each day. For a while, having Ice cream with Axel becomes one of his favorite parts of his job. The catch is, this shouldn't be able to happen.
Numerous times throughout the game, you're beat over the head with the fact that Nobodies cannot feel. They cannot connect, they cannot have or feel true emotions. They are cold and calculating hunters, merely seeking to fulfill Xemnas' goals. The sweetness is how Roxas finds friendship despite his overbearing surroundings, and the delicious treat he can share with his friends. The Saltiness is the fact that his sole purpose is to work for the organization, and that his friendship just shouldn't technically happen in the first place.
Secondly, let's move on to when Xion joins. When Xion joins, she's like a blank slate. She was intended to be a backup to Roxas. So that the Organization could keep collecting hearts even when Sora awoke. However, due to her involvement with Roxas and Axel, she became independent. Her existence began to complicate Sora's rememberance, with her taking chunks of his memory.
At the end of the game, after Roxas beats Saix and escapes TCTNW, he runs into Xion. They meet at the clock tower and the reality of Xion's existence is explained to him. Xion takes her hood off and shows she now has Sora's face, revealing how dire the situation is becoming. After the final boss fight, Xion sacrifices herself, knowing she and Roxas cannot both exist. Roxas desperately holds onto her, as she fades away from her nonexistent body. The sweetness was how Xion found friends just like Roxas did with Axel and found a purpose in her life. The Saltiness was in the fact that She had to sacrifice herself to save her friend, and that by having friends she damned herself to die.
Thirdly, and finally, we move onto KH2. Completely stripped of his memories from 358/2 days, Roxas wakes up, and the events of KH2 begin. Roxas, Hayner, Pence, and Olette all go to the usual spot. Roxas had never once been there, but the whole group enjoy that spot just the same. The start of the game alludes to the world's false nature. Every photo in the false town has disappeared. Not just the object, but the word too. Over the next 7 days, Roxas and the Twilight group all try and compete and train in the town's tournament. They do some homework too. After winning the tournament, the group go up to the Clock Tower. Roxas slips and falls. During his fall, a conversation between Kairi and Axel happens. I would also like to note how this turn of events also happens in 358/2 days, after beating Xion.
Roxas finally makes his way to the mansion, and finds Axel. Axel is incredibly upset with him, and the two fight. After he beats him, Roxas makes his way to the pod where Sora is located, and he pretty much dissapears. Whether that's physical or he just doesn't appear much in the story besides when he makes his way to TWTNW to fight Sora, I can't quite remember. The two fight, with Roxas asking Sora why he was chosen. Roxas was chosen to dissappear, and Sora was chosen to be the hero. Their fates cannot be changed (until the 3rd game changed that I think, still haven't played it yet) The sweetness was how Roxas was blissfully unaware of the true scope his life held and got to enjoy his last few days with friends. The Saltiness was how once he realized the reality of his world, he had to fight his best friend and knowingly give up his life for the greater good.
IN CONCLUSION
Sea Salt Ice cream is a metaphor for the constant struggles Axel, Xion, and Roxas faced, and how they overcame or found joy in spite of it.

Kingdom Hearts Characters' Names Written In Japanese + Notes
For reference if anyone is looking at KH's Japanese text/subtitles and want to catch onto names or whatever you want the Japanese text for: (also if you're not familiar typing in Japanese but are the type to search up things in the JPN side of the community as well)
ソラ - Sora
Almost, if not all characters' names are written in Katakana. Considering the term "sky" is used a lot, it does make differentiating the name and the term "sky" easier when reading. If they're referring to the sky then it'll appear as the kanji 空 usually
リク - Riku
カイリ - Kairi
ロクサス - Roxas
Ro-ku-sa-su
シオン - Xion
Shi-o-n
アクセル - Axel / リア - Lea
A-ku-se-ru / Ri-a
ヴェントゥス - Ventus
Ve-n-tu-su; typing his name is lowkey a pain for me because of the half-width -> (ヴェ) "ve" and (トゥ) "tu" not being as common as sounds so I often get hesitant if I hadn't looked at his name in Japanese text in a while.
