These are often just running whatever normal ass windows or linux, in the case of windows its often specialized software to lock it to a specific program, while on linux, instead of launching a full desktop environment, you can just launch a graphical session limited to a single program.

there's also "Embedded Windows/Windows IoT" which is a much more stripped down verison of windows specifically for running kios- wait
its just the enterprise edition. and the enterprise editions have even MORE features and support and things?? why are you running an entire windows OS on every tiny kiosk??? i hate microsoft
