Lentil Soup

4. **Hearty Lentil Soup:** Ingredients: - 1 cup dried green or brown lentils, rinsed and drained - 1 onion, chopped - 2 carrots, chopped - 2 celery stalks, chopped - 3 garlic cloves, minced - 6 cups vegetable broth - 1 can (14 oz) diced tomatoes - 1 teaspoon dried thyme - 1 teaspoon dried oregano - Salt and pepper to taste - Fresh parsley for garnish (optional) Instructions:
1. In a large pot, sauté onion, carrots, celery, and garlic over medium heat until softened. 2. Add dried lentils, vegetable broth, diced tomatoes, dried thyme, and dried oregano to the pot. 3. Bring soup to a boil, then reduce heat to low and simmer for about 25-30 minutes, or until lentils are tender. 4. Season with salt and pepper to taste. 5. Serve hot, garnished with fresh parsley if desired. Enjoy your hearty lentil soup!

Back from ~3 year hiatus
idk if anyone still remembers following me because i´ve only ever made two original posts here and this was almost three years ago but I´d like to announce that I´m working on a recipe piece and will probably upload it in the next few days.  Warning though, I pretty much unlearned all things digital art in the past few years because I kind of quit university, then became an apprentice and therefore work fulltime and have little to no time or energy for art (which is sad)

Beet Hummus with Veggie Chips

For the Beet Hummus:
2 medium-sized beets, roasted and peeled
1 can (15 ounces) chickpeas, drained and rinsed
2 tablespoons tahini
2 cloves garlic, minced
Juice of 1 lemon
2 tablespoons olive oil
Salt and pepper to taste
Water (as needed for consistency)
For the Veggie Chips:
2 large carrots, peeled
2 medium zucchinis
1 tablespoon olive oil
Salt and pepper to taste
Roast the Beets: Preheat your oven to 400°F (200°C). Wrap the beets individually in aluminum foil and place them on a baking sheet. Roast in the preheated oven for about 45-60 minutes, or until they are tender when pierced with a fork. Once roasted, let the beets cool slightly before peeling off the skins.
Prepare the Veggie Chips: While the beets are roasting, preheat your oven to 375°F (190°C). Using a mandoline slicer or a sharp knife, thinly slice the carrots and zucchinis into chips. Place the sliced veggies on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Bake in the preheated oven for 10-15 minutes, or until the chips are crispy and golden brown. Remove from the oven and let cool.
Make the Beet Hummus: In a food processor, combine the roasted beets, chickpeas, tahini, minced garlic, lemon juice, and olive oil. Blend until smooth and creamy, scraping down the sides of the bowl as needed. If the hummus is too thick, you can add water, a tablespoon at a time, until you reach your desired consistency. Season with salt and pepper to taste.
Serve: Transfer the beet hummus to a serving bowl and garnish with a drizzle of olive oil, some freshly cracked black pepper, and a sprinkle of chopped fresh herbs if desired. Serve the hummus with the crispy homemade veggie chips for dipping.
Enjoy: Dip the veggie chips into the creamy beet hummus and enjoy this delicious and nutritious snack!

Hey lovely, I always watch your snap stories and I share your love for cooking 😍 but I'm always struggling with finding inspiration on what I should cook... for me it's important that I eat healthy and get the right nutrition and it seems like you always have so many nice ideas what to cook etc... could you post a list of your favorite dishes or give me some tips for example a nice cook book or anything that could help 😩 I mean I could google of course but I don't always find something there:/
hey girl! thanks a lot! i really try to spice it up sometimes and show you my REAL life not only fashion and make up related stuff... because seeing the same thing over and over again is quite boring! si basically i follow a lot of cooking blogs or youtube channels and there’s also lots of instagram and facebook pages. i do eat meat (and i love meat) but i try to reduce my meat consume and i also cook a lot of vegetarian/vegan dishes.

Last year we decided to give Veganuary a bash after being vegetarian fish/dairy eaters for over 25 years. We said from the outset that if we really felt we wanted to eat something we would & we’d have a ‘flexitarian’ approach... I can remember the moment when it hit me. We were on the beach in Vung Tau & there were all these super cute little crabs running around & I thought no this really isn’t right. Although this year has been far from perfect, yes there have been incidences, mainly featuring random dairy, on the whole it’s been surprisingly easy even in a country where we don’t have access to things like vegan butter, cheese etc. Eating plant based is not hard, but being a fully fledged vegan is a bit more of a challenge. That’s the challenge we’re starting this year 😊🌱 thank you to the vegan community for making it a bit less daunting! I would also like to say amazing work to @greggs_official @mcdonaldsuk @pizzahutuk @icelandfoods @marksandspencer & all the other mainstream companies who are supporting the movement in the UK! I have always had becoming a vegan in the back of my mind since i was a little girl and first discovered where meat came from. Many years later after doing a lot of work on myself these same thoughts of veganism keep popping up... then i see your speech and i know i have to do this but i now have 2 young children 1 and 2 years old fussy little eaters as it is and a big muscley meat eating husband. I am finding it hard for them to like and eat the vegan food any recommendations on recipes etc?
youtube.com/cookingwithplants has amazing, simple and delicious recipes! They might be fussy for a little while but their taste buds will adjust and soon they’ll love the tastes and textures of fruits, beans, grains, nuts, seeds and veggies. There’s countless ways to throw those foods together. All you need are a few go to recipes for breakfast, lunch and dinner. Even the most staunch meat eater will love the right vegan meals. I’m speaking from personal experience. Good luck!
