Chocolate Pumpkin Layer Cake with Maltesers
Ingredients
For the Cake:
• 1 3/4 cups (220g) all-purpose flour
• 3/4 cup (65g) unsweetened cocoa powder
• 2 cups (400g) granulated sugar
• 1 1/2 tsp baking powder
• 1 1/2 tsp baking soda
• 1 tsp salt
• 2 large eggs
• 1 cup (240ml) whole milk
• 1/2 cup (120ml) vegetable oil
• 2 tsp vanilla extract
• 1 cup (240ml) boiling water
For the Pumpkin Filling:
• 1 cup (240g) pumpkin puree
• 1/4 cup (60ml) heavy cream
• 1/4 cup (50g) brown sugar
• 1 tsp ground cinnamon
• 1/2 tsp ground ginger
• 1/4 tsp ground nutmeg
• 1/4 tsp ground cloves
For the Cream Cheese Frosting:
• 8 oz (225g) cream cheese, softened
• 1/2 cup (115g) unsalted butter, softened
• 4 cups (480g) powdered sugar
• 1 tsp vanilla extract
For the Chocolate Ganache:
• 8 oz (225g) semi-sweet chocolate, chopped
• 1 cup (240ml) heavy cream
For Topping:
• 1 cup crushed Maltesers (chocolate malt balls)
• Caramel sauce for drizzling (optional)
Instructions
Making the Cake:
1. Prepare the Oven and Pans: Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. Mix Dry Ingredients: In a large bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
3. Mix Wet Ingredients: In another bowl, whisk together the eggs, milk, oil, and vanilla extract.
4. Combine Wet and Dry: Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
5. Add Boiling Water: Carefully stir in the boiling water until the batter is smooth. The batter will be thin.
6. Bake: Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
Making the Pumpkin Filling:
1. Cook the Pumpkin: In a medium saucepan, combine the pumpkin puree, heavy cream, brown sugar, cinnamon, ginger, nutmeg, and cloves. Cook over medium heat, stirring frequently, until the mixture thickens, about 5-7 minutes. Remove from heat and let cool completely.
Making the Cream Cheese Frosting:
1. Beat Cream Cheese and Butter: In a large bowl, beat the cream cheese and butter together until smooth and creamy.
2. Add Powdered Sugar: Gradually add the powdered sugar, one cup at a time, beating well after each addition.
3. Add Vanilla: Beat in the vanilla extract until well combined.
Making the Chocolate Ganache:
1. Heat the Cream: In a small saucepan, heat the heavy cream until just simmering.
2. Melt the Chocolate: Pour the hot cream over the chopped chocolate in a bowl. Let sit for 2 minutes, then stir until smooth and glossy. Let cool slightly.
Assembling the Cake:
1. Layer the Cake: Place one cake layer on a serving plate. Spread a layer of pumpkin filling on top, followed by a layer of cream cheese frosting. Repeat with the second layer.
2. Add the Ganache: Pour the slightly cooled chocolate ganache over the top of the cake, letting it drip down the sides.
3. Garnish: Sprinkle the crushed Maltesers on top and drizzle with caramel sauce if desired.
Serving:
• Chill the cake for at least 30 minutes before serving to set the layers.

The confusion around sources of gluten is linked to the Food Allergen Labeling and Consumer Protection Act of 2004, according to Buckton. “The law requires that wheat be declared on product labels, but doesn’t require barley, rye or common oats to be declared,” she said.
To make things worse, gluten-containing grains can sometimes be hard to identify. For example, you may read “malt” on an ingredient list, but that’s typically made from barley, which contains gluten.

“‘Hidden’ gluten refers to the gluten that is either not mentioned on a product label in a way that is obvious or is in products that may not seem likely to contain gluten but do,” according to the Gluten Intolerance Group.
The organization has published a list of 38 common food and drink items with hidden gluten.

“If something is not labeled ‘gluten-free,’ check the ingredients to make sure there’s no wheat, rye, barley, malt, brewer’s yeast or oats,” she said, adding that natural flavors, seasoning, smoke flavors, yeast extract and autolyzed yeast extract can be problematic as well.
“Wheat grown in the United States is typically higher in gluten content, since the majority is hard red wheat, while Europe grows soft wheat which has lower gluten content,” said Christina Meyer-Jax, a standard process nutrition chair and assistant professor at Northwestern Health Sciences University.
But, there’s no way to say for sure that the bread you’re eating in Europe is made strictly from soft wheat. Both Europe and America grow different types of wheat, so some places in Europe grow hard wheat, Baker added. And, in 2021, 17.5% of U.S. wheat exports went to Europe.
She added that the incidence of celiac disease in Europe has been increasing at the same rate as in the U.S., and Europeans with the condition avoid gluten in their home countries.

1 Big Serving of Red Lentil Soup

Do you ever want to make soup but don't want to make enough to feed an entire army? Me too. Sometimes I just wanna make myself a soup for lunch. Sometimes I don't want to meal prep for an entire week's worth of soup. Sometimes I want a soup recipe that is easy and fast. So I figured it out and now I'm sharing it freely. Enjoy. Customize to your heart's content.
This recipe makes about 2 cups of soup total.
You Will Need:
1 medium pot
⅛-¼ cup of dry red lentils
1 cup veggie broth◇
2 cups water
some** chicken bullion powder*◇
some** frozen veggies (I used an onion, celery, bell pepper mix)
1 chopped carrot
some** fresh or dried herbs (I used dried rosemary and thyme)
some** salt, pepper, and red chili flakes
1 oz preferred noodles◇ (I used red lentil penne)
some** shredded cooked chicken* (I used leftover rotisserie chicken because it is cheap and easy)
Directions
Add your veggie broth, water, chicken bullion powder, red lentils, and carrot, herbs, salt pepper, and chili flakes to a medium pot.
Bring to a gentle boil over medium/medium high heat and set a timer for 25 minutes. Stir every few minutes or so.
When there is about 15 minutes left on the timer, add your frozen veggies.
At around 8-12 minutes left, add your noodles (depending on how long your noodles take to cook).
With only a couple minutes left on the timer, add your cooked shredded chicken.
Put in a large bowl and enjoy!
*If you want to make this without meat, don't use the chicken bullion powder and replace the 2 cups of water with more veggie broth. Leave out the shredded chicken. It will still be very good!
**Measure with your heart like your ancestors intended.
◇ This recipe works great with gluten free noodles. Make sure you check your ingredients for potential gluten contamination if you need to avoid gluten like me. Bullion powder and certain broths can sometimes be a sneaky source of gluten (via certain yeast extracts, smoke flavoring, or malted ingredients).

I don't know exactly what type of thing you're wanting to bake so ill give 3 options...
If you want something super chocolatey these brownies are good
Ingredients
1/4 cup Dutch process coca powder (20g)
5 ounces (142g) semisweet chocolate (preferably 64 to 68% cacao), coarsely chopped
6 tablespoons unsalted butter (3 oz / 85g), cut into pieces
1/4 cup neutral oil, such as vegetable or grapeseed (2 oz /56g)
1/2 cup granulated sugar (3.5 oz/ 100g)
1/2 cup packed dark or light brown sugar (3.5 oz / 100g)
1 large egg
2 large egg yolks
1 1/2 teaspoons vanilla extract (8g)
3/4 cup all-purpose flour (90g)
2 tablespoons malted milk powder (18g)
1/2 teaspoon Morton kosher salt (2.5g)
6 ounces (170g) milk chocolate, coarsely chopped
Method
Combine cocoa powder and 1/4c or 60g (per recipe) boiling water to bloom cocoa.
Add semisweet chocolate, butter, and oil. Melt over double boiler
Add sugar and brown sugar and whisk till well incorporated. Add eggs and vanilla and whisk thoroughly till very smooth
Add flour, salt, malted milk powder. Whisk for 45 seconds to develop a chewy texture
Fold in milk chocolate and pour into greased and lined 8x8 pan
Bake 350 for 25-30 minutes
Rest brownies on wire rack till completely cooled then cover and refrigerate till chilled through before serving (12-24 hours)
If you want something more citrusy and fresh these key lime pie bars are good
Ingredients
1 ¾ cups graham cracker crumbs (12 large rectangles)
2 tablespoons ground pecans
⅓ cup granulated sugar
¼ teaspoon ground cinnamon
1 stick (½ cup) unsalted butter, melted
3 egg yolks, room temperature
1 can (14 oz) sweetened condensed milk
4 teaspoons lime zest (about 3 limes)
½ cup key lime juice (regular limes are fine too)
Method
Position a rack in the center of the oven and preheat the oven to 350ºF. Spray an 8x8 square baking pan with cooking spray and line with parchment paper, set aside.
In a small bowl, stir together the graham cracker crumbs, ground pecans, sugar, and cinnamon. Add the melted butter and stir to combine. Make sure all the crumbs are moistened. Press the crumbs into the bottom of the baking pan and bake for 10 minutes. Remove from oven, leave the oven on.
In the bowl of an electric mixer fitted with the whisk attachment, whisk the yolks for 2 minutes. Add the condensed milk and continue to whisk for another 2 minutes. Stop the mixer, scrape down the sides, add the lime zest. With the mixer on low, drizzle in the lime juice, let the mixer run for 2 minutes once added. The pie mixture will be slightly thicker when done. Pour the filling into the crust and bake for 15 minutes.
Cool completely on wire rack. Filling will set as it cools. Refrigerate for at least 2 hours, and ideally overnight. Slice and serve chilled.
And if you want something just classic here's my chocolate chip cookie recipe (you can also like add anything else to these instead of chocolate chips and nuts to great success) (also this one has a bit more detail cause it is a recipe i developed)
Ingredients
2 Sticks Butter
100g (1/2 cup) Sugar
250g (1 1/4 cup) Brown Sugar
2 Eggs
4 g (1 tsp) Vanilla Extract
350g (2 cups plus 3 Tbsp) AP Flour
1 g (1/4 tsp) Cinnamon
6 g (1 tsp) Baking Soda
6g (1 tsp) Morton Kosher Salt (See note)
6 oz (3/4 cup) Chocolate
6 oz (3/4 cup) Chopped, Toasted Nuts (if desired)
Method
Melt butter in a pan over medium heat until the milk solids begin to brown and become fragrant. Allow to cool.
Whisk together dry ingredients(flour, cinnamon, baking soda, salt) in a bowl.
Add melted butter and sugars to bowl of a mixer. Cream butter and sugar until the ingredients are fully incorporated and the mixture has lightened slightly.
Add egg and vanilla extract 1 egg at a time until fully incorporated.
Add half your dry mixture and mix over low speed until combined before adding the next half.
Fold in your Chocolate chips and cooled, toasted nuts.
Divide the dough into 2 ounce balls (You can use a scale for this if you have it, but a 1/4 cup measuring cup works well too) and place on a cookie sheet. Cover tightly with plastic wrap and refrigerate for a minimum of 12 hours but up to 3 days.
After refrigeration cookies can be baked or placed in a sealed bag and frozen for up to 3 months.
Bake at 400f for 14-18 minutes (see note)
Notes:
All of the non weight measurements are pulled from conversion tables on the internet and are therefore untested. Should work fine but just be aware. I would highly recommend a scale for this recipe due to the complexity of the conversions.
Type of salt here is very important because salt can differ massively in grain size causing inconsistent measurements by volume. If using diamond crystal kosher salt use 1 3/4 tsp and if using table salt use 3/4 tsp
Your oven may require different time and/or temperature to achieve desired results so I've given a wide time range. I recommend experimenting after the first batch to see what works best for you!

Blender Extended Expressive Renderer (BEER) is a free and open source realtime non-photoreal (NPR) rendering engine. It's a free and Open source real time render engine made with full focus on Non Photorealistic Rendering or Stylized rendering. It distinguish itself from other engine by being extremely customizable for the most skilled among us

The only inconvenience with this render engine is the terrible terrible (needed to be said twice) lack of up to date tutorials. This shouldn't confuse people in thinking that this project is dying or unpopular. The latest release was on July 20th.
How to download and install malt/beer?
Downloading malt is pretty straightforward, on the github release page: https://github.com/bnpr/Malt/releases/tag/Release-latest
blender preference, enabled Malt render
Downloading and installing BEER is more complicated, first of course downloading it from github: https://github.com/bnpr/BEER
From the zip you will only need the BlenderBeer folder so you should extract is and put it anywhere.
You will also need to download Pygments which is found here: https://github.com/pygments/pygments/tree/master
You won't need the whole thing, once you download the zip, extract the pygments folder only.
Now that we have all the ingredients we can start cooking.
First you will need a script folder, put it where you keep your blender files. Then in this script folder add two folders modules and addons.
Next, you move the pygments folder in the modules folder and the BlenderBeer folder in the addons folder.

perfect amaretto cookie coffee creamer
1 cup water 1/2 cup sugar 1 tablespoon vanilla extract 1 teaspoon almond extract .5 teaspoon cinnamon extract 3 tablespoons malted milk powder 8 oz heavy cream
heat the water with all ingredients except heavy cream and stir until sugar dissolves. the malted milk powder should dissolve and result in a solution that looks like skim milk. if it's too watery or clear add more. i use an immersion blender to fully blend all chunks of malted milk powder.
chill in a bottle with 8 oz headroom for the cream. add cream later when solution is cold.

Today's cereal is Oatibix Flakes Nutty Crunch!
Initial impressions: I simply must apologize for the sorry state of this poor cereal box, purchased from a supermarket a large distance from my house, I swaddled it in my arms as I soldiered on through a thunder storm but it was clearly not enough to save it's constitution. However the inside remains just as pristine as ever for this exciting new review! Oatabix Flakes Nutty Crunch is a cereal made up of a number of different components; classic oatibix flakes, honey comb, almonds, cornflakes and caramelized nuts. Before pouring it out, I followed the instructions on the top of the box and shook vigorously. Hopefully this means a nice even distribution of bits throughout.
Post bowl thoughts: All the individual components merge here to form an extremely dusty and beige bowl of cereal, without a particularly distinct smell. When I take my first spoonful, the texture of the oatibix flakes makes me feel like my teeth are small millstones grinding against each other to turn wheat into flour. It's not all together unpleasant, but I can't shake the thought from my head as I make my way through the bowl. The additions here of honey comb, almonds, cornflakes and caramelized nuts get slightly lost and instead pop up every once and a while to add a crunch of texture. They don't impact the taste at all though, which is a shame as it means the whole bowl stays relatively bland. This is a cereal that would hugely benefit from the addition of some fruit to add a brightness to the neutral palate it possesses straight out the box. On the whole my main complaint with Oatibix Flakes Nutty Crunch is that it is not gluten free. Surely replacing the wheat in Weetabix with oats is a great way to exclude gluten from the cereal as a whole, but no. This cereal contains malt barley extract, right down near the bottom of the ingredients list. It's frustrating that clearly no thought was put into making this cereal an accessible option for people stuck with expensive and uninteresting free-from foods, when a small adjustment could have enabled it. All in all, unnecessary inclusion of gluten aside, this isn't a bad bowl of cereal. It's also not a good one. Perhaps as I work my way through the box and add some mix-ins, I'll feel more generous towards it, but as things stand I can only offer a shrug.

Cinnamon Crunch Bagel Loaf Prep time: 15 MINUTES, PLUS 1 HOUR 30 MINUTES FOR RISING cook time: 50 MINUTES total time: 2 HOURS 35 MINUTES, MOST OF THIS IS INACTIVE TIME yields: 1 (9x5 Inch) BAGEL LOAF
Ingredients
1 1/4 cups warm water 2 teaspoons active dry yeast 2 tablespoons honey 2 cups bread flour* 1 1/3 cups white whole wheat flour 2 teaspoons cinnamon 1/4 teaspoon salt 1 teaspoon vanilla extract 2-4 ounces white chocolate, shredded 1 teaspoon baking soda, for boiling 1 teaspoon malt syrup or brown sugar, for boiling
Cinnamon Crunch Topping 1 egg, beaten 3/4 cup brown sugar 3 tablespoons cinnamon 1 teaspoon vanilla 4 tablespoons butter, melted
Instructions
In the bowl of your electric mixer** fitted with a dough hook, combine water, yeast and honey, stir to combine, then let sit until foamy, about 10 minutes. Once foamy, gradually add the bread flour, white whole wheat flour, cinnamon and salt with the mixer on low speed. After 5 minutes or so, if the dough is still sticky, add 1/4 cup more bread flour at a time until the dough pulls away from the sides of the bowl. Knead for 3 minutes longer and then knead in the white chocolate until evenly distributed. Remove the dough from the bowl and knead a few times with your hands, forming it into a ball. Brush a large bowl with oil. Place the dough inside, turning to coat. Cover the bowl with a wet towel or plastic wrap. Allow the dough to rise in a warm place until doubled in size – about 1 hour. Once doubled, punch down the dough and place on your counter, using a little more flour if needed to prevent from sticking. Divide dough into 5 balls. Cover and the balls and let sit 30 minutes. Grease a large bread tin (mine was 9x5 inches) and preheat the oven to 350 degrees. Bring a large pot of salted water to a boil. Add the baking soda and malt syrup. Carefully drop one dough ball at time into the boiling water. Boil 1 minute, flip and boil another minute and then remove from the water with a slotted spoon. Place the dough in the prepared bread pan. Repeat with the remaining dough balls, lining them up against each other in the bread tin as you go. In a small bowl, combine the brown sugar, cinnamon and vanilla for the topping. Once all the dough balls have been boiled and are in the bread tin, brush the tops, and all down the cracks and sides of the loaf, with a beaten egg. Sprinkle the brown sugar/cinnamon mixture over top. You may not need to use all the mix. Try to leave clumps of sugar, to create nice big crunchy chunks. Drizzle the loaf with the melted butter, mounding some of the sugar mixture together to help create better cinnamon sugar clusters. Bake 35-40 minutes or until the top of the loaf is dark golden brown. If the top starts burning before the loaf is finished cooking, cover the top with foil. Remove the loaf from the oven and leave to cool in the tin for about 5 minutes before turning out onto a cooling rack. Allow to cool completely before slicing…or try to anyway…right. *you may use regular flour, but your loaf will be a bit denser.
**You can also make this recipe without a stand mixer. Just knead the dough with your hands for about 5 to 10 minutes.

Kihei, Hawaii (August 8, 2023) – Maui Brewing Company is introducing a Kernza® Pilsner in partnership with Patagonia Provisions, the food and beverage business of outdoor apparel company Patagonia. The Kernza Pils is brewed with Organic Vienna and Organic Pilsner malts with Organic Talus and Organic Wakatu hops and Regenerative Organic Certified® Kernza®. The light-bodied beer is moderately bitter with 40 IBUs and balanced with sweetness that finishes dry. It is clear with pale straw to gold appearance and offers an elegant, floral hop aroma. Its ABV is 4.6%.
Kernza®, a deeply-rooted regenerative perennial grain, has the potential to transform the brewing industry. Kernza® stabilizes soil, requires minimal tilling, increases soil organic matter, and improves soil structure and water-holding capacity. Patagonia is confident that ongoing research will also confirm that Kernza® draws down and stores more carbon in the soil than annual grains. If either of us are exposed, we get weakened brittle nails that can crack all the way down into the quick, itching hives with blisters, and those are just the visible symptoms, severe mood swings and crankiness, weakened intestinal linings (which causes a whole host of other malnutrition issues), 4+ pounds of inflamation gained OVERNIGHT and more all because our immune system LITERALLY STARTS ATTACKING OUR BODY CONFUSING IT FOR GLUTEN, especially the brain and thyroid. Our reaction is sometimes delayed by weeks, so we won't even know what got us most of the time
Even with labeling, there are many GF items we still can't eat without being exposed because they're made with oat flour and we are THAT sensitive to shared equipment. Some celiacs (like in my case) also cross-react to the protien casien in dairy because it is so molecularly similar to gluten, and my mother can't eat quinoa.
Tons of other things are unsafe just because they're made in the same factory.
Eating out is a whole other can of worms, we don't get to very often, but when we do we either find a dedicated GF place, or spend hours researching and looking at reviews from other celiacs and still cross our fingers as we eat.
When flour is used in a kitchen the particles fluff up and stay in the air for hours, which we either breath in, or it falls on the surfaces all around the kitchen on work spaces, tools, and food on the other end of the room. Gluten also tends to leave a thin film on the inside of pots and pans it is cooked in (esp pasta) that doesn't get cleaned off even by dishwashers and scrubbing.

I get super anemic unless I cut a certain protein out of my diet, because it bulldozes the villi in my intestines. but if I post about it, right-wingers send me gore images. I guess you can't expect shitty people to be logical, but I've even heard lefty people make fun of gluten stuff, and it's like why are you mad about this??? why are you pissed off that I'm eating bread that doesn't taste as good so that I can have blood in my body? it's so morally neutral.
