I quite like the idea that Arthur has been keeping a diary this entire time, only Mina didn't include it with the documents for some reason. Possible reasons include:

His spelling is appalling and his handwriting is illegible, so it would be too much effort to type up.

It is so embarrassingly soppy about literally everyone that even Mina I-heart-my-husband-forever Harker thought that it was a bit much to share.

It is extremely explicit and makes it very clear that Arthur and Lucy did not wait until marriage before getting it on, and in fact did so at every possible opportunity.

The redacted portion of Lucy Westenra's letter reminded me of two things

Lucy is consistently depicted as indecisive in Dracula media (and even in non-adaptational material), torn between the three men courting her. But Lucy in canon could not scream and display in neon lights "The Guy I Want To Propose To Me Is Arthur Holmwood" any louder.

Removing Lucy's mother in Dracula media removes such a core aspect of her character.

I wish the whole"like a dumb animal" part were kept.
