Something I had been curious about but never tried before was chicken hearts. It’s not that I didn’t want to, it’s just that I had a roommate who was a bodybuilder and while I live to eat, he would eat to live. His diet mostly consisted of minced chicken, sweet potatoes, broccoli and chicken hearts all fried, often in the same pan. It was something.
Anyway, I was turned off the idea of chicken hearts but realized that if you cook anything right, it can taste good. I went to my local butcher, The Meat Department on the Danforth, and picked up a half pound of frozen chicken hearts. I spoke to one of the butchers, who told me they were from Traynor Farm in Peterborough which, when I looked into it seemed reputable enough.

500g/20 chicken hearts came to $3.35. I ended up trimming about 175g of fat and other undesirable pieces off so was left with 325g (approx $0.01/g = $4.55/lb). Considering that if I were to be serving them as an appetizer, I could get six skewers with three hearts/skewer and charge $5-6/skewer depending on the seasoning and labour. All that being said, chicken hearts are a highly cost effective if they sell.
For mine, I decided to marinate them in a rehydrated pepper mixture (guajillo, piquin and arbol), roasted tomatoes, garlic, onions, achiote paste and adobo chipotle peppers. I also threw in a healthy spoonful of my homemade chocolate habernero hotsauce because a) I’m a hedonist and b) the vinegar content works to tenderize the meat along with the tomatoes.

After I marinated them for two hours and I then I skewered them and seared them in a cast iron skillet. Unfortunately I lost focus at that point and stopped taking pictures but I assure you...they looked great. The taste however, did not live up to the look. They were incredibly tough and chewy which tells me that I didn’t marinate the hearts long enough for the meat to fully tenderize. However they were a massive leap forward from eating unseasoned even tougher and chewier chicken hearts sitting next to a shirtless bodybuilder and I will definitely try making them again.

#latergram @jasonmaloner decided to have a #poolparty yesterday so, because i take any opportunity to #cook massive amounts of food, I planned a menu. Jason manned the #grill for me which was super helpful and made hamburgers and hot dogs. I made two kinds of my #Oreo #cheescake #cookies (kettle corn & red velvet), #kale salad (the vinaigrette has #rawhoney and there is a lot of freshly grated #Parmesan in the salad- that is all I will tell you; it is one of my signature and most requested recipes), grilled #corn salad with grilled #jalapeños, #capresesalad with #basil from my mini garden & #grilled tiger bread, & lastly #chicken thighs with a sweet and spicy/smoky wet rub & citrus/honey mustard glaze (the extra glaze was also used on grilled shrimp - not pictured because #shrimp seems to be the first thing that disappears) . Extra noms like roasted jalapeños with the seeds and ribs still intact were only consumed by me, I have a serious addiction to spicy food. This week and last week have been a failure so far. Last weekend I tried my hand at a Crème Brûlée for my first time and I utterly failed, I didn’t allow the custard to thicken properly resulting in a soupy custard. This weekend I attempted to cook a Beef Wellington and boy did I fail, I should’ve made the puff pastry one day in advance but I waited until the last minute. To add ,on top of that I also attempted to make duchess potatoes for a side dish , which came out okay . I didn’t even have enough pastry for a strudel .
I really don’t know how to feel right now . I am disappointed with the fact that I procrastinated, and what really kills me is that the filet mignon is kinda expensive for me just to wait until the last bloody minute. It sucks because Monday through Friday I’m helping Dad as a handyman, by the time Saturday rolls around I’m beat I sleep all day , right now it’s 1 in the morning and It’s way too late to keep cooking and the Beef Wellington is in the fridge just soaking the puff pastry, no lie i ruined everything. I may have ZERO followers or readers to let down , but I let the most important person down , myself. I have to get up and brush myself off but right now this very second I feel like a failure.

#whatsforbrekkie EGGS BENEDICT • Ingredients: * 2 English Muffins * 4 Eggs * 4 Bacon Strips, cut in half * 2 1/2 Cups of Spinach * 4 Ziploc Bags * 4 Rubber Bands * Chives (Garnish) For the Sauce: * 3 Egg Yolks * 1TBS of Lemon Juice * 1/2 Cup of Melted Butter * A pinch of Cayenne Pepper • 1. Set up a pot of water to start boiling. 2. Cook your bacon on a pan brushed with a bit of oil, cook until golden brown. 3. Cook spinach in a separate pan with olive oil and salt and pepper. 4. Grab a short cup, open a Ziploc Bag and with your hand inside the bag, push into the cup so the seal is on the outside of the cup and the inside of the bag is open inside of the cup. 5. Spray the inside of the bag with Pam spray, crack egg into the bag, sprinkle Salt and Pepper on the egg, wrap rubber band to separate the egg from the excess plastic, then seal the bag. 6. Place the sealed bags in the boiling water and let it cook for 5 minutes, turning it over once. 7. Toast your English Muffins and spread butter once done. FOR SAUCE: 1. In a blender, combine egg yolks, lemon juice, and cayenne pepper. 2. While on low, slowly pour in hot melted butter. 3. Add salt and pepper to taste. STACKING TOGETHER: 1. Place each half of the English Muffins on a plate. 2. Place spinach and then two strips on bacon on each half. 3. Cut Ziploc bags at the rubber band and gently let the egg slip out and onto top of the bacon 4. Top with a drizzle of hollandaise sauce and a sprinkle of chives. 5. Serve while hot! PRO TIP: Place boiling water in a thermos and let it sit until the sauce is ready. Pour out boiling water and pour in sauce. If sauce is warmed up in microwave or in a pot, it will curdle. The sauce must be kept warm by double boiler or in a warm thermos. I found the thermos to be easiest. Bone-shaped cookies. Hello There ✋👀
New to Tumblr, New to blogging, vlogging, etc.
I read an article not to long ago that informed me one of the most important things you can do for self awareness, growth and improvement is to WRITE IT ALL DOWN.
After reading the article I realized writing it all down is a more common tool than I had known. Successful business owners and CEO’s use this method all of the world to track their success, failures and ideas. I decided I could benefit from this method on my voyage towards triumph.
So here I am, my name is Kaylee and I’m roughly 24 years old. I am just barely finding my passion and still deathly afraid that I could wake up one day and hate it. I recently enrolled at The Art Institute, working to obtain my Associates of Science in Baking and Pastries. Hoping to own a prosperous food truck one day.
I thought I could share my more than likely boring journey about juggling school and everyday life in your mid 20′s. I’m sure someone is doing it better but hey here I am anyways hoping to rock it.
My goal is to share my ventures while I struggle to maintain straight A’s, work and take care of my 7 year old fiance, (7 at heart). Periodically sharing recipes and video tutorials using the skills I am working to master.
