Ingredients
sticks of butter, browned
250g brown sugar
150g granulated sugar
2 eggs
the contents of 3 vanilla beans, or up to 3 tablespoons of vanilla extract according to taste
380g, or approx 3 cups, of plain flour
1 tsp baking powder
陆 tsp baking soda
up to 12oz baker鈥檚 choice of chocolate
Baker鈥檚 choice of hazelnut spread
pistachio cream
Instructions
Sift together dry ingredients and set aside.
Brown the butter and pour it into a heat proof bowl, then place the bowl in an ice bath and beat it back into a slid but soft creamy form. Beat both sugars into the creamy butter until fluffy.
Beat in the 2 eggs one at a time until the batter is fluffy.
Beat in the vanilla.
Beat in the dry ingredients in 1/3 cups until smooth.
Fold in the chocolate.
Rest the cookie dough in the fridge for at least 12 hours.
Fill the bottom of a large muffin tin with pistachio cream and hazelnut spread and freeze.
After the dough has aged and the disks are solid, cove the frozen disks completely with cookie dough and cover the cookies to rest them in the fridge for another 24 hours.
If you would like taller cookies, freeze the dough portions for 6 hours before placing the frozen cookies directly into oven preheated to 375F.
Turn the trays after 8 minutes of baking for uniform baking and browning. Bake for another 7-8 minutes.
Remove from oven and let cool before enjoying.
suggestion:
For best flavor balance, make 2 batches: use milk chocolate with the pistachio cream for the best match of the Dubai Chocolate flavor profile, and pair dark chocolate with the hazelnut spread to balance the sweetness of the hazelnut spread.
Both types of chocolate would probably go very well with peanut butter filling.
IMPORTANT: Make sure to pay close attention to the kind of pistachio spread you buy: if you prefer pure pistachio flavor use pistachio butter, which is essentially pure ground pistachios; if you want a sweet filling use pistachio cream, which includes added sugars, oils, and dairy.

So I attempted to be a little cook yesterday because I was in a good mood lol. Soo I made a late breakfast, made lasagna and a salad for dinner, and attempted a red velvet cake (my favorite) recipe that I saw on IG. Little did I know, cake flour and cake mix are not the same thing (although deep down in my spirit I felt like they weren鈥檛) 馃槀 soooo everything was going good, cake batter was tasting good and all. Why did my cakes overflow in the oven so I had to transfer some to other pans. Honey cake just falling apart 馃槀 my sister said it was good overall but honey I learned something new yesterday because whew! I will be attempting that again WITH CAKE FLOUR 馃ぃ馃ぃ

Carrot cake! I'm probably making frosting, but this is fresh out of the oven. I used this recipe with gluten free flour (and as per usual had a couple ingredient amount mishaps). I'll update with our opinions after it's cooled and frosted if I remember to.
