クリスマスのぼたん鍋 Christmas dinner "Botan Nabe"wild boar hot pot at Hatakaku in Kyoto. Vastly different from the usual yakiniku-style barbecued boar found throughout Japan, this "Saikyo" white-miso-based nabe was invented at this restaurant more than 100 years ago, is only served from November to March, and maintains a Kyoto-suitable approach to making this wild game into a subtle fine dining experience. Botan means "Peony" and the boar meat is laid out to resemble the flower. Each room at Hatakaku is private and themed and there is an Irori hearth recessed into the tatami at the center of the room. In the center of the hearth is the clay nabe pot, heated by delicately placed oak charcoal. The meal starts with boiling some of the boar meat so that all the vegetables (leeks, shiitake, enoki, wheat gluten, etc.) can absorb some of the fat. The nabe flavor gets more and more complex as you go. Lots of side dishes as well including small fish, pickles, and yokan served at the beginning of the meal. At the end, 2 balls of mochi were brought to finish the nabe out and a bowl of rice to pour the remainder of the miso onto closed things out.
