I made bread. I haven't made bread in almost two months and it shows. I think it had something to do with humidity and how hot it was in the kitchen. It's on a rack cooling. Lockdown/Isolation Day 53: The ups and downs of baking Over the weekend I baked 2 loaves of bread. I only intended to make 1 but the first one was a fail. I started it too early in the day and it was proved etc on Saturday, a particularly warm day where I spent a lot of time in the garden tending to the bbq. Obviously because of this I forgot to take good care of my dough so it overproved. I thought it would be ok but it was gloopy when I was forming it and when it came out of the banneton it just started spreading. My first frisbee bread for a while. Yesterday I wanted to redeem myself. I started it later in the day, it was cooked, I paid proper attention to it and it turned out really nicely. Alas, the yeast I used in this #pasquadipane was too old so they didn't rise. Paul Hollywood and Mary Berry would be disappointed in me...I tried a soda bread recipe and it did not turn out... it was over mixed and under baked I think. I'll have to try again tomorrow and see if I can do better. Fresh bread! The second rise didn’t do much. Two of the loaves, which I punched down last night and left to rise overnight, came out very flat. The two I punched down this morning and let rise while the first two were baking are loftier, but had very little spread. All in all I so far prefer the other bread recipe I have used, but will continue to experiment with things. I do not know how much the change in weather (hot and sunny yesterday, cloudy and cool today) has to do with my breadfail. In other news, I have once again confirmed that we are made of meat and will sear nicely on contact with a 450-degree metal surface.

Week 138: Savoury brioche couronne ..................................................................................... It was Epicurean Market time, which means lots of cheese, wine and good food. In the spirit of sharing our "loot", my friends and I had a "cheese and wine" evening. And that is always a great reason to bake my favourite savoury loaf. This time, the loaf was filled with pancetta and Gruyere picked up from the Epicurean market, with a generous grating of fresh Parmiggiano Reggiano. Unfortunately, I made the mistake of baking this in convection mode, and the crust turned out a lot of "crunchy" than it should be.
