Hello Farm Friends, welcome to our Sourdough Starter Journey. Follow along and share your own experience making sourdough starter and baking sourdough bread. Day 1 of Sourdough starter. INGREDIENTS All-purpose flour (or a mix of all-purpose and whole grain flour) Water, preferably filtered EQUIPMENT 2-quart glass or plastic container (not metal) Scale (highly recommended) or measuring cups Mixing spoon Plastic wrap or clean kitchen towel Day 1: Make the Initial Starter 4 ounces all-purpose flour (3/4 cup plus 2 tablespoons) (I used 3/4 cup King Arthur Whole Wheat Flour & 2 TBSP. Adluh all purpose flour) 4 ounces water (1/2 cup) Weigh the flour and water, and combine them in a 2-quart glass or plastic container (not metal). Stir vigorously until combined into a smooth batter. It will look like a sticky, thick dough. Scrape down the sides and loosely cover the container with plastic wrap or a clean kitchen towel secured with a rubber band. Place the container somewhere with a consistent room temperature of 70°F to 75°F (like the top of the refrigerator) and let sit for 24 hours. just would like 2 make you all aware that I got to breadstart the lunch rush and I totally killed it
#i make posts like this in case other jj employees follow me#need them to know im better than them#anyway#i thought they werent going to let me breadstart esp not the inshop line#but they did! it was me and amber#me and Amber both know im faster but wasnt sure if anyone else did#im not fast enough to do the delivery line tho lol#like i could have if i wanted to but its crazy i dont want to#there are So many orders and they all have so many mods#crazy#anyway happy to report the double is going well#halfway through. its 4 now which is usually when i come in#it feels like i just came in like normal and this morning happened yesterday#hoping for a good nightshift !#Johannah can breadstart now which is a relief#shes not good by any means but i dont have to make literally every sub that comes through here#my posts

Old Assistant Manager Accidentally Texted Me
Funny thing happened this week.
So one of my jobs is at a local art museum, and at the beginning of the month my boss (the museum store manager/events and marketing director) left for artist residency, leaving me to take the reins and watch the store. So one day this week I’m closing up the store (printing out sales stuff, locking the front door, shutting off the lights, etc.) when I get a text message. I check it, thinking it’s my mom - and I see this from a number I don’t immediately recognize: “Hey GI3S, it’s Dave. Can you come in from 7-7:30 tomorrow? I don’t have a breadstarter.”
I am incredibly confused and am standing there awkwardly like “UHM...no?” Fortunately some further investigation clears up some of my confusion - this guy is Manager Dave, an assistant manager at the local Jimmy Johns, where I used to work. The keyword here, however, is used to; I quit Jimmy Johns in 2019. So now I’m faced with the possibility that this guy either didn’t get the memo or he texted the wrong number and I’m not sure which is more awkward.
Regardless, though, I send the guy a quick text being all like “Dude, I am so sorry, I quit two years ago,” pack up and head home. Later I get a text back explaining that he’d meant to text another girl with the same name as me and apologizing for the out-of-nowhere text. We wished each other a good week and went on with our lives, much as one of my friends says I shoulda done the Chaotic Evil thing and just agreed to take the shift to mess with him.

Hiii! Not an expert but i know there’s more to this!
It’s affected sorts of european bread too, but gluten intolerance rates were actually way lower before the bread industry was industrialised. When making smaller/homemade batches of breads- like sourdough- where you begin with a breadstarter that you can keep to use again, the breadstarter slowly creates chemicals that makes bread easier to digest, meaning a lot of people that would have been considered gluten intolerant now wouldn’t have been back before it was industrialised. Unfortunately I think the method is a little more expensive than the current method, so its not used often.
My guess is that the person in the tiktok tried some sort of fancy bread with an old breadstarter while in Europe, (of course they exist in America too though, but i guess when you’re in a place like Italy or France you have a legal obligation to try the fancy breads /j).
And one final note, did prev comment just say that America is colder than Europe? It depends on region but… dont you guys have places like Death Valley?? Maybe i just think Europe is cold because I live in the UK but, it sounds a little toasty over there, I dunno. Even if its not as hot as I think, I do find it hard to believe that you guys bred a higher gluten concentration for the cold despite having so many hot regions, can anyone find a source?
So if you are a North American with a gluten intolerance, now doubting the legitimacy of that because of this video or screenshot, I promise they aren’t giving you pesticides, but wether you’d consider them manufacturing the cheaper and harder to digest bread to be poison in its own way, thats up to you.

I really do love my job dearly but man i have been there a lot lately. And public enemies are doing ok now! Johannah (maybe pregnant girl) is pretty good on line now, she's started to breadstart which she's less good at but it's such a relief she's even started.
Don't remember who my public enemy #2 is lmaO but I think it's Brad maybe? Probably. He is still doing bad he's not good but he's friendly at least so.. what can I say

Ive given up completely on the map that's just not going in. I think what I'm going to end up doing is deleting the project on kdp and just starting over with a clean file, I think the map thing confused them and that's why they had all those errors. This would be really easy to do but I've built it up as a monumentous task in my head and haven't done it. For this project I would have to use my big laptop (which I've named big Bertha) instead of my little laptop which seems very daunting and is just too much for me I guess
I'll get it printed eventually. I'm whatever abt it

I’m making a spectacular baby apple starter for bread making. It’s Day 6, it took 3 days to ferment the apple and the bread starter is on Day 3 and it’s lush!!! I’m using an old slow cooker insert to grow it in and it’s very happy there. It’s actually ready now to use... I plan on using half of it at a time to make bread and feed the other half to make loads more. Rochester Sourdough
Folks, here’s how the bread turned out! N used his bread starter to make a regular sourdough for the first time, and it turned out excellently. I definitely don’t think I have the patience to make bread frequently like N does, but I’m sure glad he’s got the passion and patience for it! I can’t wait to see what kind of new bread adventures we’ll embark on.
