You can eat these Quick Egg Muffins even if you don't eat gluten, dairy, or follow a clean eating plan. They are a healthy and tasty grab-and-go breakfast or snack because they are full of vegetables and bacon is optional.
Ingredients: 6 large eggs. 1/2 cup diced bell peppers. 1/2 cup diced spinach. 1/4 cup diced onions. 1/4 cup diced tomatoes. 1/4 cup diced cooked bacon optional. 1/4 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon garlic powder. 1/4 teaspoon onion powder. 1/4 teaspoon paprika. 1/4 teaspoon dried oregano. 1/4 teaspoon dried basil. Cooking spray or coconut oil for greasing muffin tin.
Instructions: Start by heating the oven to 350F 175C. Mix the eggs well in a large bowl by beating them. Chopped bell pepper, spinach, onions, tomatoes, and bacon if using should be added to the eggs. Add salt, black pepper, garlic powder, onion powder, paprika, dried oregano, and dried basil to the mix to make it taste better. Make sure that everything is well mixed. Use cooking spray or coconut oil to grease a muffin tin. Fill up each muffin cup about two thirds of the way to the top with the egg mixture. When the oven is hot, put the egg muffins in for 18 to 20 minutes, or until the tops are set and golden. After taking them out of the oven, let them cool for a few minutes. Then, use a knife to carefully loosen the edges and take the muffins out of the tin. For a quick and easy gluten-free breakfast or snack, serve them hot or let them cool completely before putting them in a container that won't let air in.

When one side is baked, you need to turn the potato pancakes over and fry them until the characteristic golden color on the second side
It is best to serve ready-made pancakes prepared according to the classic recipe with fresh sour cream. You can mix it with chopped dill or other fresh herbs, or add crushed garlic. Regular pancakes are eaten while still hot

In a large bowl, combine rolled oats, hemp hearts, chopped pecans, ground flax seed, and coconut. In a separate bowl, whisk together melted butter, maple syrup, water, vanilla extract, sea salt, cinnamon, nutmeg, and allspice. Pour the wet mixture into the dry ingredients and stir until well combined. Spread the mixture in a thin layer on a baking sheet (use two baking sheets if necessary). Bake for 18 to 20 minutes, stirring halfway through at the 10-minute mark. The granola should turn golden brown but be careful not to let it burn. Keep an eye on it!
