When we think of dishes made from carrots, Gajar ka Halwa usually tops the list. But did you know there’s another delicious and healthier option? Yes, it’s the carrot cake—and not just any version, but a Vegan Carrot Cake that’s perfect for diabetics too!

What is a Carrot?
Carrots, known scientifically as Daucus carota, are root vegetables most commonly seen in orange but also found in red, purple, and yellow. Originally from Persia, they’re now grown across Asia and Europe. Carrots are loaded with beta-carotene, fiber, and antioxidants—making them a great choice for health-conscious individuals.
Why Try Vegan Carrot Cake?
Carrot cake is a wonderful way to enjoy the natural sweetness and texture of carrots. And now, you can do it the healthy way! Our vegan version is made without eggs, milk, or any dairy products. It’s also free from refined sugar, making it ideal for people managing diabetes or following a plant-based diet.
What’s more, this recipe includes khapli wheat flour, known for its low glycemic index, and soft dates for natural sweetness. The result? A moist, soft, and flavorful cake that’s healthy without compromising on taste. You can also make mini cupcakes with the same batter for easy snacking.

39 please and thank you!
Good Morning friend! 💜
39. Top 5 desserts.
Well since it's easter time, sweets are definitely on my mind so this was a good choice. I'll be eating almonds and chocolate eggs this week, but probably not any of my favourite desserts. Which is hard, I love desserts and sweets so narrowing it down to 5 is a challenge but let's see. In no particular order.
1.Baked Cheesecake. - I know this one is also called new york cheesecake which makes sense for me because that's where I first had it. I have distant family in Newark and it was on my trip there that I first tried it. Over the years I found it in random places as well and I've had it made for me a couple of times recently here. My mouth is watering as I type. I used to make the no bake cheesecake a lot but I don't have the patience for baking any more. And this one is just better.
2. Arroz Doce - So this one has it's origins in asia but I don't know exactly where our particular type originated from. Maybe someone here can help me. I guess you can call it sweet rice pudding or something similar, cause that seems to be the closest to ours. It's basically rice, milk and eggs, and topped with cinnamon. I prefer it creamy, but you can also get it closer to pudding consistency.

3. Lemon Meringue Pie - Specifically with a biscuit base. Another one I use to make a lot but it has been years. My bestie bakes it for me though so I get to eat it a lot.
4. Carrot Cake - with cream cheese frosting. Another one I can have everyday.
5. Any type of chocolate dessert. Chocolate cake, chocolate mousse, just all the chocolate. Gimme.
Also, all the ice cream. But that goes without saying. Thanks for the question!

Would Chunk Eat It?: He would eat maybe 1/50th of it. So no. 1/5
Final Score: 2/5
Critic’s Notes: Why would you waste this much food. Just host a party. Donate it. Something fucking anything I am begging at this point.

enchanting snackish meal plan (pretty + light, but nourishing)
The kind of girl who eats daintily, but mysteriously—like maybe you live off of pumpkin things, matcha, and things wrapped in parchment paper. You want to glow, stay full enough to have energy, and keep your meals pretty, light, angelic, and witchy.
Here’s a cool, magical meal/snack plan that matches your aesthetic but still fuels you. Every item is quick, cozy, and snackable—even if you get full fast.
☀️ Morning (7–9 AM) — "Forest Witch Breakfast"
Pumpkin oatmeal bites (use pumpkin purée, oats, maple, cinnamon — roll into balls + chill)
OR: Cottage cheese or Greek yogurt with honey, cinnamon, and apple slices (if you can tolerate dairy!)
Matcha or coffee with almond/oat milk and cinnamon
A boiled egg or 2 if you need protein without heaviness
Pumpkin purée oatmeal with maple drizzle + cinnamon + almond milk
Rice cake with almond butter + sliced strawberries + hemp seeds
Chia pudding with vanilla, honey, and berries (prep the night before!)
Half an avocado toast with sea salt + chili flakes + a boiled egg
+ Warm matcha latte with oat milk + tiny buttered toast fingers
✨ Aesthetic tip: Use vintage cups, mason jars, or wooden spoons. Add cinnamon to everything.
🧺 Midmorning snack (10:30–11 AM) — "Study Girl Rations"
Lavender or blueberry tea
A couple of almond butter crackers or a slice of toast with butter and cinnamon sugar
Dark chocolate square or a medjool date
Handful of dark chocolate chips + almonds
Baby carrots with a little hummus or tzatziki
Apple slices with cinnamon + peanut butter
A small protein bar or granola clusters
Crackers with herbed cream cheese
🕯️ Lunch (12:30–2 PM) — "Mysterious Midday Meal"
Mini charcuterie box: turkey or rotisserie chicken slices, cucumber spears, baby tomatoes, berries, and a few pretzels or crackers
OR: Soup in a thermos (butternut squash, tomato basil, lentil)
If at home: grilled cheese with spinach on whole grain bread + cut in triangles
Small bowl of soup (tomato basil, lentil, or miso) + a slice of buttered toast
Turkey + cheese rollups with mustard + fruit on the side
Mini salad with spinach, goat cheese, nuts, and berries + a slice of bread
Mini quesadilla with black beans + avocado + pico de gallo
Rice bowl: jasmine rice + sautéed spinach + egg + a tiny bit of sauce
✨ Aesthetic tip: Eat slowly, like you’re reading a book in a haunted library.
🧃 Afternoon Snack (3–4 PM) — "Magic Hour Snack"
Chai iced latte or iced matcha + a little tea cookie or biscuit
A banana with almond butter, or a mini rice cake with cream cheese + jam
OR: a small protein smoothie (frozen banana, milk, cinnamon, oats, optional protein powder)
Greek yogurt with honey + granola crumble
Trail mix (nuts, dried fruit, maybe white chocolate)
Half a PB&J sandwich or English muffin with jam
Banana with peanut butter drizzle
🌙 Dinner (6–7 PM) — "Soft Dinner in a Candle-Lit Kitchen"
Roasted sweet potatoes + kale + chicken or tofu with a drizzle of tahini or balsamic glaze
OR: Brown rice bowl with veggies and sesame or peanut dressing
OR: Mini flatbread pizza with pesto, mozzarella, and cherry tomatoes
Pasta with butter + garlic + spinach + a sprinkle of parm
Sautéed mushrooms + rice + tofu or chicken + tamari sauce
Baked sweet potato with cinnamon or butter + small veggie side
Ramen with bok choy + egg + scallions (light on the broth)
Couscous salad with chickpeas, tomatoes, cucumber, lemon
✨ Aesthetic tip: Turn the lights low, eat by candle or string light. Play sad indie music or lo-fi jazz.
🍵 Bedtime Snack (if needed) — "Dream Girl Treat"
Warm milk with cinnamon or herbal tea
A couple butter crackers, toast, or a fig bar
OR: Pumpkin muffin, small square of chocolate, or fruit + nut butter
Herbal tea + dark chocolate square
Crackers + slice of cheese
Warm milk + cinnamon + nutmeg (dreamy for sleep)
Frozen grapes or cherries
Mini fruit bowl with mint
💡 Notes for You:
If you get full easily, frequent mini-meals work best for energy and mood.
Each meal should have a little protein, carb, and fat, even if tiny. That’s how you glow.
When in doubt, make it ✨cozy and cute✨. A sliced pear in a ramekin >>> a giant salad you’ll hate.
This plan works even with a controlling parent—you can prep snacks secretly or use low-effort ingredients that seem “normal.”

If anyone is curious about the cake, I looked up this recipe:
1 cup white sugar
½ cup unsalted butter
2 large eggs
2 teaspoons vanilla extract
1 ½ cups all-purpose flour
1 ¾ teaspoons baking powder
½ cup milk
And bastardized it in the following ways:
Leave the recipe up on your screen but too far away to read it clearly,
Open and drain a can of beets. Yes beets, the red earthy root vegetable,
Use an immersion blender to puree the beets some,
Eyeball roughly a half cup of canola or sunflower oil instead of butter [to save butter, or just use butter see if I care],
put in a much *closer* to tumblr worthy level of vanilla extract,
Pour in about a quarter cup of heavy cream, it's fine there's extra fluids in the beets and you probably over-shot the oil,
Add in 2 extra large eggs because I never use anything but extra large eggs,
Add a pinch of salt it never called for,
Add in what's left in a bag of white sugar and then over-shoot making up the rest with brown sugar slightly, by eye, it's fine,
immersion blend again until you are sure there's no chunks,
Add in what's probably a 3rd cup of cocoa or more and blend more,
eyeball a cup and a half or so of flour by scooping generously a few times with a quarter cup measure and letting it heap,
Dump in what's -probably- more baking powder than that recipe calls for,
immersion blend again until it looks like batter, even if it's on the *slightly* runny side. If it seems way too runny add a bit more flour,
***If you want to be extra -me- about it, you can also add in a tablespoon of cinnamon and an tablespoon of cayenne pepper at this point, but I get the sense most people won't want to***
Oil and flour a baking pan and pour it all in, mine is this big oval-ish one. I baked it at 350 without preheating until it smelled done.
tada!
Now we mix SALTED butter with solid coconut oil half and half, dump in some coco and an appropriate seeming amount of icing sugar with a squirt of vanilla extract and blend aggressively until it's fluffy
Do not apply it until the cake is cooled.
Unless you are particularly sensitive to the earthy taste of root vegetables and dislike them, you probably won't notice the beets, but you know how carrot cake maintains this moist tenderness because of the inclusion of fibery vegetable matter? Yeah. This chocolate cake will have something very moist and carrot cake-like about the texture, letting it be heavy without being dense in a way that comes off as very rich, even though it still has plenty of air in it. No soaking in anything fancy required.
If you use cocoa that hasn't been treated with alkaloids it'll probably come out convincingly red too. This might actually be a red velvet recipe tbh but my coco is the dark stuff.
The coconut butter in the icing pairs well with the earthy hint from the beets and makes the icing firm at cooler temperatures but melt quickly in your mouth, it's very yummy. I didn't even bother making Italian meringue to make a butter cream and it's still impressively good. Coconut butter in icing is honestly always good unless you hate coconut.
Whatever, yay cake!
I know people will say baking is an exact science but getting the portions mostly correct is fine so long as the batter has the right consistency the beets make it more forgiving or something.
Have fun and be yourself <3

Abigail Marston Emoji HC Part 5
Prompt here.
𝐅𝐎𝐎𝐃𝐒. 🎂 BIRTHDAY CAKE — when is your oc’s birthday? how old are they? what are their sun, moon, & rising signs (if known)? what about their tarot card, ruling planet, & ruling number (if known)? do they fit the typical traits of these sun, moon, & rising signs? I don’t know the answer to a lot of these. I picked Taurus for Abigail because I felt it fit her personality the best. They’re romantic, family oriented, self sacrificing, but also a bit bossy and stubborn. I put her birthday as May 11th, 1877. The birth year is canon. She’s 22 in the main rdr story, approximately 30 in 1907. (I suck at math, so this may be wrong.) In Modern Au, I write her as around 25. 🍝 SPAGHETTI — what is/are your oc’s favorite food(s)? Chili, Belgian chocolate, peach tea, lo mein, and tamales. 🍰 SHORTCAKE — what is/are your oc’s favorite sweet(s)/dessert(s)? Chocolate cake and Belgian chocolate with fruit filling. 🍦 SOFT ICE CREAM — what is/are your oc’s favorite ice cream flavor(s)? Mint Chocolate Chip
🍔 HAMBURGER — is your oc good at cooking? are they good at baking? which one do they prefer?
Canon Abigail is terrible at it in both RDR 2 and RDR 1. She tries so hard, but without anyone to teach her and without being able to read a cookbook, she can only do so much. However, she’d love to learn more because she’s embarrassed and self conscious that she isn’t able to do more. Modern Au Abigail knows more about cooking thank to her foster mother in her last placement as well as Hosea. She also loves to read cookbooks and watch how to videos and recipe videos. She’s a better cook than a baker, though.
🥯 BAGEL — what does your oc’s typical breakfast look like? do they usually eat breakfast?
Abigail in canon drinks coffee, but we’re not shown any breakfast food. However, I would imagine she eats something like eggs or toast. Maybe oatmeal. There’s no way she would let Jack pass by without breakfast. Modern Au always has her coffee and sometimes a smoothie, toast or home made egg cups.
🥪 SANDWICH — what does your oc’s typical lunch look like? do they usually eat lunch?
RDR doesn’t show us lunches. I would imagine she would eat sandwiches with meat, cheese if they were lucky and it didn’t spoil, maybe some canned vegetables and an apple. That’s what I would imagine it would be at Beecher’s Hope as well. Modern AU Abigail will eat a sandwich, a wrap or a salad with fruit.
🍛 CURRY AND RICE — what does your oc’s typical dinner look like? do they usually eat dinner?
In canon it was stew until the epilogue where she would try to make a main dish out of meat, potatoes, green peas/carrots/green beans/other vegetable with pudding on special nights. Modern Au will try out different things. Sometimes it’s meatloaf, sometimes it’s a casserole, or lasagna, or tacos, or spaghetti, salads, stir frys - whatever she has energy for and what she can get Jack to eat.
🍸 COCKTAIL GLASS — what is your oc’s favorite alcoholic drink, if they can drink? She loves Irish cream, whiskey, rum, wine and margaritas.
☕️ HOT BEVERAGE — does your oc prefer coffee, tea, hot chocolate, milk, water, or some other drink? how do they like to take this drink (ex. coffee with milk, hot chocolate with whipped cream, a specific kind of tea, etc)?
She loves her coffee to the point where she named her horse Arabica. (hc). Hot chocolate was a huge treat in the 1890s, but a little more accessible in the early 1900s. She also enjoys mint tea or peach tea. Pearson’s coffee was likely always black coffee, but I can see her putting a little cream or sugar. Modern Au would not be caught drinking a Frappuccino or another sugary drink. Modern Au Abigail drinks tea more often, but doesn’t drink hot coco except maybe once or twice a year.
Modern Au face claim for Abigail is Lauren Cohan.

Breakfast with Cordelia #15 Carrots with a Side of Cake
Sul Sul, Gerbits. You may be wondering to yourself “Why does Cordelia have a bag over her head?” The answer is pretty easy, I don’t feel like I can show myself when doing this recipe. This recipe will “haunt” me for the rest of my life. And I am never going to hear the end of it.
I made this recipe over the weekend and I wanted to share with you what happened.
I guess this recipe needs a name so I am going to call it “Carrots with a side of the cake.”
Thought I would be cute, and make another cake mix. But this time add some carrots to it. I grabbed a bag of carrots from the fridge and processed them all. Didn’t even think about how many carrots were in the bag. I just um… processed the carrots.
Made the cake according to the box that I had. Adding the eggs, water, and oil. However, lately, I have been using milk instead of water in my cakes and they have been tasting well.
Drained the carrots.
Added some cinnamon to the cake, and then… I added… 3lbs…or … 10.8 cups… of… carrots.
Didn’t think anything about it. Yeah. Baked it according to the box. It came out well. It smelled really good.
But the best thing was the reaction of everyone in the house.
I brought out the cake, and I just heard silence. Maybe even a few giggles. Then I come into the living room where we have the cake. I take a bite, and everyone just starts laughing.
Bonehilda turned to me and asked “ Cordelia… hun, how many carrots did you put in this?” Without even thinking about it I stated “a whole bag!” With this Cain started howling “you put 3 lbs of carrots in this cake.” I almost died of laughter that night.
Despite it having so many carrots. It was edible. And everyone, even the kiddos liked it. I am just like this is such a fun recipe. I need to share it with everyone and anyone who will listen to this.
If you want to make carrots with a side of cake the recipe will be down in the description. But if you don’t like carrots you may not like it. I hope you had a good laugh from this story. Make sure to like and subscribe for more stories and recipes in the future.
One of the comments the kiddos gave me that I have to share they said “This is a cake that Bugs Bunny would love!” This comment made me laugh so much. Vadish, Dag Dag!

MAGISTER! YOU'RE ALL BACK!!!! PLAESE GIVE ME A CAKE RECIPE OF SOME SORT I'TS EMRGYNAY
Hm? Oh, of course, so this is a recipe for a carrot cake I am quite fond of, you'll need:
350g of self raising flour.
325g of dark brown sugar.
2 teaspoons of ground cinnamon.
250g of grated carrots.
4 medium eggs.
200ml of oil, I like to use vegetable oil, but you can use olive or sunflower oil instead.
4 tablespoons of milk.
You don't need to do anything too fancy to it, combine the dry and wet ingredients seperately first, slowly incorporate the wet into the dry, and sieve the dry ingredients if you want to, just make sure everything is fully combined...
Before you start to make the batter, grease and line a cake tin (or several) and pre-heat the oven to 180°C, 160°C for a fan oven, 350°F, or gas mark 4, depending on your oven.
Once the batter is done and put into the cake tin, or evenly split between multiple tins, bake for about 1 hour to 1 hour and 15 minutes.
Make sure to stick a knife or skewer into the centre of the cake to make sure it's fully cooked before removing it from the oven, you want it to come out either clean without crumbs, or with only a small amount in the grooves of the knife, if there are a lot of crumbs stuck to it, or it comes out wet, pop it back in the oven and check on it every 10-15 minutes until it comes out clean.
Hope this helps, dear anon!

On a clear fall morning, Susasa Bellow - Lute sent her 10 year old son, Ásgeirr, to retrieve a long list of groceries for her. They were already paid for, he just needed to retrieve them for her. The young boy was excited to feel needed for once, instead of feeling neglected, and happily went into the town of Falkreath with the list his mother provided for him. She tasked the young Ásgeirr with gathering fruits and vegetables, meats and cheeses, bread and eggs, milk and cakes, very typical things his family usually ate. This is why he didn’t think something was wrong when he left. She was sending him to gather their normal groceries.
When Ásgeirr returned, his house was empty. He searched their bedrooms, the kitchen, even the basement and the surrounding property. His mother, father, and half - siblings were nowhere to be found. He even went to the grave of his half - brother, Eifarr, wondering if they’d decided to spend the morning with him. They weren’t there either. Feeling rather confused, he made his way home and decided to break into the cheese he’d been sent to collect. He didn’t get to eat it often, but he really liked cheese — surely, his mother wouldn’t blame him for it. He nibbled on some of the carrots and the cabbage before he fell asleep. Surely, they would be there tomorrow.
But they weren’t. He woke up in a cold and empty house, and the panic began to set in. Perhaps they just went on a trip and forgot to bring him. Perhaps they’d realize that he was still left in Falkreath and they’d come back. He started the fire needed to warm his house and made himself a small breakfast with an egg and a slice of bread. He accidentally cut his finger doing so, and instead of having his mother wrap it up for him, he had to do it himself. It was poorly done and kept falling off, but he did it.
By the afternoon, he started to wonder if they left him behind on purpose, which made the young boy start to cry. He sat on his mother and step - father’s bed, crying and asking the gods where his family went. When they didn’t answer, he picked himself up and tried to make dinner. It didn’t taste very good, but he made it all on his own.
After about a week, the food ran out. This is when he took to the streets, asking anyone who could listen where his mother was. Some of the townsfolk took pity on him, but it wasn’t easy to forget who he was — a bastard, the son of a mother who gave herself away to someone who promptly left her then married another to try and hide her mistake. They made sure he didn’t starve, but didn’t do much after that. Eventually, the city guard came to let him know that he’d be taken halfway across Skyrim to the orphanage. He didn’t want that, so he ran away to the surrounding woods.
It was a miracle he survived in the woods. The nights were growing colder, food was scarce, and he relied on what he could pick and dig to eat. After a few weeks, Astrid, the leader of the Dark Brotherhood found him drinking from a stream near the sanctuary. He was scary thin, his ribs visible and face gaunt. Astrid offered to take him to her home, which the starving boy accepted without question. It was then his fate was sealed, with the lamb dish he scarfed down deep within the Dark Brotherhood Sanctuary. He wouldn’t be leaving for fifteen years.

Dessert Latkes without added sugar
The preamble bit... but I'm Korean Adoptee to a Jewish family. (And BTW, yeah, I have memories of South Korea, so don't chase me like an AH.)
Annnyyyyywayyy... every year at this time I wanted to find the original latkes recipe, which led me down a rabbit hole of trying different things to create this recipe. I wanted something Asian. I wanted something Jewish. So over the years I've tried:
Cheese
beets
turnip
Sweet Potato
Taro (big and small)
Carrots
True yams (which made my hands itch)
etc. Basically, if I thought I could fry it, I wanted to at least try it.
Through a lot of discoveries and trying things out for years on end, year after year, this is the best recipe I've found to fuse my Asian and Jewish side together. I'll go over the food sciences at the end to show how I developed this recipe.
4 eggs
4 small combs of taro, peeled.
1 large carrot (or two mediums) (optional)
1 medium okinawan purple yam.
1 tablespoon of cinnamon
1/4 teaspoon of ground nutmeg
1 tsp of ground allspice
1 thumb of peeled ginger, minced (or pounded)
3 cloves of garlic
1 thumb of galangal, peeled and minced (or pounded) (about same size as the ginger. (optional)
1-2 cups flour. (add gradually, may vary depending on weather.)
pepper and salt to taste.
1 tbsp black sesame seeds (optional)
Canola or peanut oil.
1. In food processor shred the (carrot), taro and yam so they are about equal portions to each other.
2. pound the spices and flavorings so they are well blended together. (You can use a coffee grinder, but I used a mortar and pestle.)
3. Mix the shredded vegetables with the spices and aromatics.
4. Add the eggs.
5. Add the flour gradually, until it will hold together and all the flour is absorbed. Often the weather will determine the amounts needed. This is the time to stir in the sesame seeds. This part of recipe made it a hit as it adds a nice nuttiness to the latkes.

6. Warm up the oil. I like to do a test latkes before I move forward. As with regular latkes, cast iron pan is the best and make sure to use an oil with a high smoke point such as canola or peanut oil.

7. Fry up the latkes in the oil until they are crispy.

8. You can serve it with honey, if you like and/or apple sauce, they will taste spicy and sweet at the same time. I like adding the spices and honey because it reminds me of land of milk and honey and the mention of spices.

9. After the Menorah lighting, you can talk about what the candles mean and also the Palestine/Israel conflict with seriousness it deserves. Because how can we remember our suffering when we try to forget the suffering of others done in our name?

BTW, My relative did the frying for the pictures.
Food Science:
The purple yam is dense and often fries slower than regular potatoes. Having tried it on its own, it's always this way.
The taro fries much quicker than the regular potatoes.
Thus the purple yam and the taro when combined cancel each other out, oddly enough. The carrot fries about the same rate as regular potato.
The carrot pairs well with cinnamon in dishes such as carrot cake. Carrots when paired well, have a natural sweetness to it. This is brought out by the purple sweet potatoes, which can be blindingly sweet. The taro helps them be crispy. It's pretty in the bowl together to see the purple, the orange and the white.
Cinnamon and allspice makes things taste sweeter even if there isn't any sugar.
The ginger, galangal is to add an Asian-ish flavor, but also pairs well with the cinnamon. Ginger hits first in terms of flavor, and the galangal hits last, so in terms of taste kinda has this odd symmetry.
The cloves and nutmeg add a complexity and spiciness. Kinda reminds me of the holiday season.
The garlic is there to make it latkes, but is also something East Asia and Israel share with each other.
The sesame seeds add a nice nuttiness to the latkes and look striking.
Thus, zero added sugar, makes these a tasty treat. I choose honey over pure sugar because I think it's on brand and certain kinds of honey can bring out the spices in the latkes, thus pair better than pure sugar can. If you do choose to go with honey, try to find the real stuff, not the fake stuff by going to a Farmer's market. It goes well with honey comb. Support your local bees.
