I used to throw away so much leftover, almost finished, or rotten food. I always wanted to make something new instead of trying to use up what was already in my fridge. I really started to notice how wasteful that was! Not only of the food itself but also of my money. These days I'm really trying to be mindful of what's in my fridge and using it up as best I can. Whether that's throwing some wilted veggies into my "veggie stock" bag in the freezer or coming up with a, sometimes cohesive, dinner creation. Today I started with half an onion, leftover curried lentils & quinoa, some veggie stock, a potato, half a box of phyllo sheets, a third of a pack of meatless ground, and one lonely piece of bok choy.
