I don't think the children call Ford "great uncle" instead of "grunkle" because they're less affectionate to him. I interpret it as Ford just being slightly uncomfortable at wrong grammar even if it is on purpose and the children respecting it.

Counter argument is that great uncle Ford speaks in such a formal way that Dipper and Mabel thought it was weird to talk colloquially around him.
First week Dipper pulled out the dictionary and Mabel used the word "unconspicuous" during family dinner.
Ford only noticed what they were doing by the time Mabel got out of their room in full victorian attire and Dipper started using a monocle and a fake goat fur mustache.
