Patty Pan Squash
So small...so delicate...so delicious...so right as a vegetable side dish for one...so likely to be overlooked in the garden bed...so let’s get to it. In a fry pan, splash some oil, add thinly sliced onion crescents from half a sweet onion, 2 - 3 patty pan squash sliced in half then into wedges. Season with salt/pepper/garlic powder sauteing just long enough for the squash to be barely tender as they will continue to cook even off the heat. These are great served with a slice of pork and a generous green salad. See what you think...

🍆 LEMON-GARLIC ROASTED EGGPLANT 🍋
Tender, caramelized eggplant slices kissed with zesty lemon and garlic—ready in 30 minutes!
🛒 INGREDIENTS
✔️ 1 large eggplant, sliced into ½-inch rounds ✔️ 2 tbsp olive oil ✔️ 2 garlic cloves, minced ✔️ 1 tsp lemon zest (about 1 lemon’s worth) ✔️ 2 tbsp lemon juice (freshly squeezed) ✔️ ½ tsp salt ✔️ ¼ tsp black pepper ✔️ 2 tbsp fresh parsley, chopped ✔️ Optional: Pinch of red pepper flakes
📋 INSTRUCTIONS
1️⃣ PREP & GLAZE
Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
Arrange eggplant slices in a single layer.
Whisk olive oil + garlic + lemon zest + lemon juice + salt + pepper. Brush both sides of each slice generously.
2️⃣ ROAST
Bake for 20-25 mins until golden and tender (flip halfway for even browning).
3️⃣ SERVE
Sprinkle with parsley and red pepper flakes (if using).
Optional: Add a dollop of Greek yogurt for creaminess.
💡 PRO TIPS
▸ Less bitterness: Salt eggplant slices and let sit 15 mins before roasting (pat dry after). ▸ Grill option: Cook on medium-high grill 3-4 mins per side. ▸ Meal prep: Stores well in the fridge for 3 days—reheat in oven or enjoy cold in salads.

What a miserable day! It’s been wet and gloomy out since I reluctantly pulled myself out of bed this AM. Then I got yelled at, innocently, for the first time by a patient in a language I could not even comprehend! On a positive note all those doctor-patient communication skills workshops in handling difficult patients that I used to think were a waste of time actually came into some use today! 
The best way to turn this frown of a day upside down was with some comfort food! These spiced roast vegetables are a perfect winter side dish to warm our hearts and so easy to prepare. It’s definitely going on my Christmas dinner menu for this year :) 
Warm Spiced Fennel & Squash 
fennel, squash, olive oil, nutmeg, cinnamon, turmeric, cumin, salt & pepper
Preheat oven to 200 degrees celcius 
Cut the squash and fennel into approx. 1inch wide wedges. Toss in a generous amount of olive oil, about 1tsp of nutmeg, cinnamon, turmeric and cumin. Season with salt & pepper. Put vegetables on a baking tray lined with baking parchment. Roast in preheated oven for about 45 minutes or until golden. 
Great complement with roast lamb and pork chops!

Easy Garlic Toast
Ingredients
8 slices bread (any kind, I used white)
1 stick unsalted butter, softened
1 1/2 tsp. garlic powder
2 Tbsp. Parmesan cheese
Directions
1. Preheat the oven to 450 degrees.
2. Combine butter, garlic powder, and parmesan cheese in a bowl.
3. Spread garlic butter evenly on each slice of bread and line on a sheet pan.
4. Bake for 5 minutes in the oven, then turn the broiler on for an additional 1 to 2 minutes, until the bread crisps.

Creamed Leeks
Soon enough, the leeks in your garden will size up to these beauties making it time to pick and prepare a delectable leek delight. This makes a great side dish served with roast pork, brown rice with margarine, and cold melon. See what you think...
1 - 2 T. margarine
3 - 4 leeks, cleaned, sliced into thin rounds
1 t. coarse salt
dash pepper
2 T. whole wheat flour
4 c. half and half, room temperature
1 t. parsley, fresh, kitchen scissor chopped to speed the process
In a large fry pan, add margarine and leeks. Begin to saute the leeks, season with salt and pepper. Sprinkle flour over all and toss to cover all, turn temp to simmer. Slowly, gently stir in the half and half with the leeks/flour mixture to begin making the creamed part of this dish. Keep stirring as you let the sauce thicken - 5 - 10 min. Serve with the parsley sprinkled on top as garnish.
