4 chicken thighs
2 zucchinis
1 red bell pepper
1 eggplant
3 tablespoons harissa
Juice and zest of 2 lemons
3 tablespoons olive oil

In a bowl, mix the harissa, lemon juice and zest, olive oil, salt, and pepper. Add the chicken thighs and marinate for 30 minutes.

Ingredients: 1.5 lbs chicken breast. 1 cup chicken broth. 1 lemon, juiced and zested. 1 can artichoke hearts, drained and chopped. 1 tsp garlic powder. 1 tsp dried oregano. 1/2 tsp salt. 1/4 tsp black pepper. 1 tbsp olive oil.
Instructions: Add oregano, salt, black pepper, and garlic powder to chicken breasts. Add olive oil and set the Instant Pot to saut mode. For about three minutes on each side, brown the chicken breasts. Put chopped artichoke hearts, chicken broth, lemon juice, and lemon zest into the Instant Pot. It will take 10 minutes of high pressure cooking after the lid is locked and closed. After it's done, quickly let the pressure out and then carefully open the lid. Use two forks to shred the chicken. Serve hot, and if you want, top with more lemon zest. Have fun!

Instructions: Put the ground chicken, chopped cilantro, minced garlic, lemon zest, lemon juice, salt, and black pepper in a bowl. Combine well. Cut the chicken mixture into four equal parts and form each one into a burger patty. Brush cooking oil on a grill or grill pan and heat it up over medium-high heat.
