Schlafly Beer announce news location for the annual Stout & Oyster Festival to Schlafly Bottleworks, March 8th and 9th, 2024.

ST. LOUIS, MO ... Schlafly Beer, the original, independent craft brewery in St. Louis, announces the highly anticipated return of its annual Stout & Oyster Festival on Friday, March 8, from 5 p.m. to 9 p.m. and Saturday, March 9, from 11 a.m. to 9 p.m. with a new location at Schlafly Bottleworks (7260 Southwest Ave, St. Louis, MO 63143). Schlafly’s Stout & Oyster Festival is the largest of its kind in the Midwest. Schlafly flies in over 50,000 oysters overnight from both coasts, hosts 20 seasoned oyster shuckers to shuck oysters live all weekend, and brews more than 12 stouts exclusively for the popular festival. The move to Maplewood offers a more conducive event layout for a festival of this size and also frees up the Schlafly Tap Room to prepare to host CITY SC fans before every match.
CEO David Schlafly states, “We look forward to the Stout & Oyster Festival every year, and Schlafly Bottleworks provides the perfect setting for attendees to be able to move about freely, enjoy the music with their families, and catch up with the shuckers. With the St. Louis CITY SC games starting up again at the end of February, our team is busy at work preparing the Tap Room to once again serve as a pregame destination for fans as the Saint Louligans support group.”
The draw of the festival will be the same as years prior: specialty stouts, stories from the star shuckers, live music, and more. Click here to view a short video to get a taste of the festival fun. Schlafly works directly with oyster farmers, chefs, and more from across North America who attend the festival as the “star shuckers,” shucking oysters on-site all weekend. The festival will have an exclusive draft pavilion where guests can grab any of the incredible stouts from the brewers themselves and chat about all things beer-related! The stout options will include: Mexican Chocolate, Irish Cream, Raspberry Coffee, Coffee Stout, and Oatmeal Stout. The tent will be the only location where guests can purchase their beer on draft.
The Schlafly brewing team will offer multiple new stouts, as well as rotating specialty stouts throughout the festival such as Horseradish Stout, Export Stout, Tropical Stout, BA Imperial Vanilla Pumpkin Stout, and BA Imperial Coconut Stout. A Kilderkin of Tabasco Oyster Stout will be available. The exclusive Tropical Stout will be a specialty event in the Draft Tent where guests get to watch their fresh tropical fruit be infused into their beer in real-time with a Randall Machine, a sophisticated filter system that allows the user to run draft beer through a chamber of whole-leaf hops, spices, herbs, fruit, etc.
Other Schlafly favorite beers will also be available in 16oz. cans, including White Lager, Just a Bit Hazy IPA, Pale Ale, and more in the Schuckerdome and inside the brewpub.
East Coast and West Coast shuckers will each offer an array of raw oyster varieties from their home coast at raw bars including Blue Points (East Coast), Malpeque (East Coast), Delaware Bay (East Coast), Totten Inlet (West Coast). Samish Bay (West Coast), and Chef Creek Oysters (West Coast) both inside the brewpub and outside in the “Shuckerdome” which will be located this year on the Bottleworks parking lot. Additionally, Fried Oysters, Oysters Rockefeller, and Oyster Chowder will be available. There will be a limited menu available inside the restaurant along with an inside bar serving all of Schlafly’s 16 draft styles and will accept cash.
In addition to the cast of “star shuckers,” Schlafly’s Stout & Oyster Festival offers a unique atmosphere with live music for the weekend. The full band schedule is as follows:

DJ Red I Hi Fi will be performing inside the brewpub throughout the entire festival as well.
Schlafly’s Stout & Oyster Festival will be a credit card-only event with the exception of the bar inside of the brewpub. The event will continue rain-or-shine with tents prepared if a turn of the weather comes about. Seating of 450+ will be available for guests to enjoy their beer and food. Leashed dogs are welcome in the parking lot only. Dogs will not be allowed in any tents or inside the brewpub. Schlafly’s parking lot will have limited parking for the festival. There will be public parking available on the west side of the parking lot and several public lots nearby. Please be respectful of Schlafly’s neighbors. Police will be onsite for security throughout the entire festival and surrounding parking lots. The use of public transportation, cabs, Uber, and biking is highly encouraged. Dennis King will be back for a second term as premier of Prince Edward Island, with CBC News projecting his Progressive Conservatives will claim victory in the 2023 provincial election.
Polls closed at 7 p.m. Monday, and as of 7:45 p.m. PC candidates had been projected to win in eight districts and were leading in another 12 for a total of 20.
King and members of his cabinet were the first to pick up their districts, with PC Matthew MacKay running away in District 20: Kensington-Malpeque. King was projected to win in District 15: Brackley-Hunter River.
Fellow cabinet ministers Natalie Jameson, Steven Myers and Cory Deagle were also projected to be re-elected.
When the P.E.I. legislature was dissolved in early March, the Progressive Conservatives had 15 seats; the Greens had eight seats, forming the Official Opposition; the Liberals had four seats; and the NDP and Island Party had none. [...]

The Shellfish We Cook, Oysters
Oysters, like the clams, mussels and scallops are bivalves, which means they have 2 shells that close together with a hinge. Many people think of getting pearls from oysters. Actually most mollusks that have shells are capable of creating pearls but they are not all valuable. The pearl oysters are the most valuable of all the mollusks but these oysters are not related to the edible variety. Edible oyster can be found on the Atlantic coast in shallow water beds or reefs from Canada to Argentina. The Pacific version can be found from Washington to Australia.
The Eastern oyster is the most popular with the largest production being in the Chesapeake Bay area. Some of the top varieties of the Atlantic are the Blue point, Chincoteague, Malpeque, Cotuit, Apalachicola and the Wellfast. All of the Atlantic oysters are of the same species and are named after the area where they are found. On the Pacific coast Wilapa bay in Washington is the largest producing estuary. Some of the types found on the west coast include, Golden Mantle, Penn Cove, Yaquina Bay and the Olympia. Most harvested oyster average 2-4 inches where the Olympia is much smaller, about one and one half inches. Oysters are also widely farmed on the Pacific coast and in the Gulf of Mexico with the Pacific area farming by far the largest quantity.
It has been said that oysters should not be eaten in months that don't have the letter "r" in the spelling. This myth was started before good refrigeration was available and was based on the fact that oysters would spoil faster during the warmer months, from May to August. Oysters generally spawn during these months which will lessen their quality. They become thin, soft and watery but not inedible. There are now oyster farms that produce oysters that do not spawn which will eliminate this problem.
Oysters have a long shelf life. If stored properly they can be kept alive for 3 to 4 weeks. Store them in a bowl covered with a damp rag. Do not put them in a plastic bag. They need air to breath. Do not eat oysters that are dead. If the shell is open squeeze it shut. If it stays shut the oyster is alive. The oyster must be capable of closing its shell and keeping it closed. You can also try rapping two oysters together. They should have a dull thud, not a hollow sound and should feel fairly heavy.
Oysters can be served cooked or eaten raw. To open the oyster, if you will be eating it raw, slide an oyster knife between the shells near the hinge. Do not use a regular kitchen knife. A slip could cause a serious injury. Twist the knife back and forth until it opens, you might hear a mild pop when the natural seal is broken. Insert the knife into the oyster and cut the muscle that holds it together. This can be dangerous if you are inexperienced. Use heavy gloves or a heavy rag to hold the oyster. Not only is there the danger of slipping with the knife, but the shell can also be very sharp. If you will be cooking the oyster, simply put it in a steamer or a microwave until it opens. Pull them out as soon as they open so you don't cook them. After you shuck the oysters, refrigerate them and use them within 2 days.

Rufus plays with the stem of his cabernet glass , languidly stroking the length of it between his thumb and forefinger in a manner Tseng might think was a mite suggestive ... if he hadn’t already been completely sure that it was . His finger taps impatiently upon the table’s surface as he peruses the menu , as though he hadn’t already researched the menu before choosing the restaurant beforehand . The long - suffering waitress who stands by his side with an unwavering unfaltering smile , completely cognizant of whose presence she was enduring . And what her tolerance could entail .
“ I’m tempted to order the oysters on the half with the Bloody Mary agrodolce , ” Rufus muses lazily , ignoring the girl’s simpering smile and Tseng’s impassive indifference . His gaze lands squarely on Tseng , and his head tips in curiosity , telegraphing the question he’s just about to pose : “ You’ve never had oysters before , have you ? ”
As an epistomological fact , he has not , and Rufus knows this . It’s not the question that bothers him so much as the way he asks , with that cocksure smile , and that gelid warmth in his voice that makes Tseng want to shove the heel of his oxfords between Rufus’ legs . The tablecloth runs nearly to the floor . No one would be the wiser .
“ Excellent choice ! “ she enthuses , right on cue . Just as expected . “ The agrodolce gastrique is ethereal , created especially to compliment the brackish sweetness of the Malpeque variety of oyster we serve — ”
“ I think we’ll pass , ” Rufus interrupts , with a calculated boredom . Tseng does not fail to note the first person plural that he utilizes . “ Seems a little too likely to inhibit our plans later. Might linger with us ... if you know what I mean . ” The waitress’ eyes widen . Tseng just blinks .
“ We’ll have the honey - thyme roasted heirloom carrots to start , ” Rufus says with with a blessed finality , snapping the menu shut and setting it on the edge of the table for the waitress to take at her leisure . “ Then the dry - aged short ribs , truffle stuffed duck ... and the porcini polenta . Oh , and the orange blossom cream for dessert . ”
The waitress is in media res of gathering up their menus when Tseng decides to speak . “ So you’re just going to order for me ? ” he asks , his voice even , his words metered .
Rufus looks up with an amused regard , and his eyes flicker over Tseng’s face , searching for any clue of humor in the question . He finds none . “ ... Sorry , I just naturally assumed .. that you might prefer a little guidance . ”
There it was again . That mellifluous patronization that comes part and parcel to his de trop patronage .
“ Can’t I order for you , then? ” Tseng hears the question leave his lips before he can curb the desire to say them .
Rufus’ amusement softens fondly , and he settles back in his chair , certain of something he ought’n’t be . “ Sure . ”
The waitress offers up the menu again , but Tseng holds his gaze with a dedicated languor .
“ Pickles . He’ll have the pickles . ”
