Last night I did a Passover cooking demo at Temple Beth El in Stamford, Connecticut. One of the dishes I prepared was this dried fruit and coconut Charoset. It’s a delicious and interesting change from traditional apple/walnut version and perfect if you have family with nut allergies, as we do. Btw, this a side dish — sort of like applesauce or cranberry sauce — so you can make this anytime and serve it with meat, chicken, fish and so on. It’s not just for Passover! Here’s the recipe: Dried Fruit and Coconut Charoset 1 cup chopped dried figs 1/2 cup chopped dried apricots 1/2 cup dried cherries or cranberries 1 navel orange 1 cup flaked or shredded coconut 2 teaspoons chopped fresh ginger 1/2 teaspoon ground cinnamon 1/2 cup apricot jam 1/3 cup sweet white or red Passover wine Combine the figs, apricots and cherries in a bowl. Slice the orange and cut the outer edges to remove the peel and white pith. Cut the flesh into small pieces and add to the bowl. Add the coconut, ginger, cinnamon, apricot jam and wine and mix ingredients. Let rest for at least one hour (preferably several hours) before serving. May be made a 2-3 days ahead. For the second consecutive year, a rare convergence of three major religious observances will occur next month with the overlapping of Ramadan, Passover and Easter. Given that Ramadan begins 10-12 days earlier each year, this unusual intersection happens only every thirty years or so and, this spring, it will transpire at the beginning of April. While each of these holy holidays is based on different faiths and beliefs, they are all commemorated by certain food rituals and practices. Amongst the differences in these traditions, there also lie some common themes and similarities in the large, festive communal meals as well as restrictions on eating patterns and consumption of certain foods. Read on to learn more!   Ramadan: Evening of Wed, Mar 22 - Evening of Thu, Apr 20 (North America) Ramadan is the ninth month of the Islamic lunar calendar and begins at the first sighting of the crescent Moon. During this holiest of months, Muslims observe a complete fast during daylight hours with no food or drink – even water – permitted from dawn until sunset. Ramadan culminates in the celebration of Eid al-Fitr or Festival of Sweets.   Many who observe Ramadan wake before sunrise to eat suhoor, a heavy and nourishing breakfast that provides enough energy to fuel them throughout the day. Recipes usually feature a balanced mix of complex carbohydrates, protein, healthy fats, and ingredients that contain water for hydration. Thanks to their high nutritional density and protein content that promotes satiety, eggs are featured in many traditional suhoor dishes. Make it a one-stop shop at your local Down to Earth farmers market this weekend by picking up a dozen pastured, free-range eggs plus the bulk of the ingredients you need to make these delicious suhoor recipes:   Tahini-Maple Sweet Potato Pancakes Serves one, multiply as needed:   - 2 eggs - 1 baked and cooled medium-sized sweet potato - 2 tablespoons maple syrup - 1 tablespoon tahini - 1 small, chopped apple   Spinach & Feta Omelet - 3 large eggs - 1 clove garlic - 1 cup sliced white mushrooms - 3 cups fresh spinach - 1/3 cup crumbled feta cheese - 2 tbsp ghee - Salt and pepper to taste   Passover: Wed, Apr 5 - Thu, Apr 13 Passover, also called Pesach, is a major Jewish holiday that celebrates the Biblical story of the Israelites’  departure from ancient Egypt. On the first two nights of the seven or eight-day holiday a seder is held where families tell the story of Passover over a tray of symbolic foods representing each part of the story, and then enjoy a meal together. While fasting is not required during Passover, foods that are leavened or made with a leavening agent must not be consumed.   The farmers market can help fill your seder plate with apples for charoset, parsley, and a variety of “bitter herb” options and offers alternatives for the dinner plate too. Because it is a kosher cut of meat that can feed many, brisket is commonly served during Passover Seder. This brisket recipe is not only super easy to follow and make, its ingredients can also be easily sourced in the farmers market:   Easy Onion-Braised Brisket - 5 tablespoons extra virgin olive oil - First-cut beef brisket (about 5 pounds), trimmed of excess fat, wiped with a damp paper towel, and patted dry - 6 large garlic cloves, peeled and crushed - 2 pounds onions, thinly sliced (about 8 cups) - 1/4 cup balsamic vinegar - Salt and freshly ground black pepper   Easter: Sunday, April 9 Easter, also called Pascha or Resurrection Sunday, is a Christian festival and cultural holiday commemorating the resurrection of Jesus. Easter feasting also has a link to fasting, since it comes at the end of Lent, a 40-day period often observed with acts of abstinence.   Easter Sunday is traditionally celebrated over a large meal featuring meat, potatoes, vegetable side dishes and dinner rolls. In preparation for Easter, Down to Earth meat vendors will bring holiday ham, pastured chicken and spring lamb this weekend; the farmstands will have plenty of root veggies and indoor-grown greens; and our chocolate and baked goods vendors will make specialty items such as Easter eggs and decorated cookies.
