For a tasty and quick vegan supper, try this simple sweet chili tofu and vegetable dish. A tangy-sweet chili sauce coats crispy tofu, which is served with colorful bell peppers, onions, and broccoli. This dish tastes great and takes less than 30 minutes to prepare!
Ingredients: 1 block firm tofu, pressed and cubed. 2 tablespoons cornstarch. 2 tablespoons vegetable oil, divided. 1 bell pepper, thinly sliced. 1 small onion, thinly sliced. 1 cup broccoli florets. 1/4 cup sweet chili sauce. 1 tablespoon soy sauce. 1 tablespoon rice vinegar. 1 teaspoon sesame oil. Sesame seeds and sliced green onions, for garnish.
Instructions: In a bowl, toss the tofu cubes with cornstarch until evenly coated. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the tofu cubes and cook until crispy and golden brown on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside. In the same skillet, add the remaining tablespoon of vegetable oil. Add bell pepper, onion, and broccoli. Cook, stirring occasionally, until vegetables are tender-crisp, about 5 minutes. Return the tofu to the skillet. Add sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Stir well to coat everything evenly. Cook for an additional 2-3 minutes, until the sauce thickens slightly and coats the tofu and vegetables. Serve the sweet chili tofu and vegetables hot, garnished with sesame seeds and sliced green onions. Enjoy!

I rinsed the potatoes 🥔, cut them into wedges, season them, add a cap full of oil, and cook them in the air fryer for 20 minutes on 400 degrees.
