I'm just gonna rant about it because why not. Vincent has always been told his food lacks love. He's perfectionistic and obsessed with having control, but the absence of meaning behind his food is something he can't fix, no matter how hard he tries. He copes by telling himself that putting love into his food is a meaningless and needlessly sentimental thing when it comes to the culinary arts. When Rody shows up, Vincent feels 'inspired'. He thinks he finally understands what people mean by putting love into their food, and in his eyes, he can do that by killing Manon and serving her to Rody. In his mind, Rody loves Manon, Vincent loves Rody (though not entirely romantically or platonically), and the dish he makes out of Manon would contain that love. He's desperate to make his food perfect, and the only thing that needs fixing is the lack of emotion behind it. In his desperate need for control and perfection, he does something he can't ever undo.

After killing her, he probably spirals further, and his thoughts turn to Rody. Would eating him finally give him his taste back? There is a method to Vincent's madness, but it's still madness. He's a really well made villain with more emotion and thought behind his actions than just, "Gay, murder, nom nom."
