Bread!
A couple people actually seemed interested in hearing me rant about bread, so…. Here I am, ascending into special interest territory.
So, in very, very early human history, people started making a sort of soupy gruel by mixing grains and water together. At some point, they realized, though, that by leaving this near a fire, they could create flat loaves of what was, effectively the first bread! This early bread was most similar to modern day things like tortillas or chapatis.
But the most common idea of bread today is that fluffy stuff that’s soft and chewy, so where’d that come from? Beer! Places like Egypt were already skilled brewers, and they discovered that they could add the yeast they used in the brewing process to their grain mixture, and it would rise into something much fluffier, creating what was effectively the world’s first sourdough.
Baking also began to become a kind of status symbol over time, too. Many European cultures percieved the finer, whiter breads as better, because they usually required finer grain, and the poor were left to consume coarser breads made from things like rye and bran. Also, in Europe, it was fairly common for the more shady bakers (typically ones who baked for the poorer folk) to stretch their dough into more loaves by adding things like clay and sawdust. Also, if you’ve ever heard of a trencher before, that was originally a piece of stale bread that your meal was served on, and was typically given to the poor as alms after the meal!
Every culture had a different idea of what bread was, though, so it can get realyl hard to identify a singular linear development of bread-making, but over time, innovation and creativity would turn bread-making into the vast art known as baking. Innovations in grain milling and just general new ideas about what foodstuffs to combine grains with would produce a constant influx of innovation leading all the way up the industrial revolution.
So, modern bread: Of course, fresh bread that you buy as a loaf still exists today, but in a lot of places, fresh bread has grown to be perceived as a luxury, a new form of bread as a status symbol. Instead, many people turn to the cheaper, more utilitarian form of factory-made bread. These aggresively uniform loaves are the result of a few inventions, from the first bread slicing machine, invented in 1912, to the Chorleywood Bread Process, which was a mechanical means of mixing and working bread dough, so that it took less time and could be more easily mass-produced.
The invention of sliced bread also resulted in people consuming a lot more bread, because of how it reduced the effort involved in getting a lice of bread to eat. it further popularized the use of spreads like jam to put on your bread, and with the invention of the electric toaster, catapulted toasted bread into it’s common statusas a quick, cheap, and easy snack.
Tbh, a lot of the reason factory-made bread remains so popular in America specifically is due to things like food deserts, the problematic lack of living wages, and general attitude towards lunch as being a meal you have to eat quickly on whatever measly break your school/work gives you. Throwing together a shitty sandwich with pre-sliced bread that doesn’t go bad or stale that fast, with prepackaged lunch meats is ideal, because you know it’ll keep until lunch the next day. It may not be decadent, but it’s quick and easy and it’s not like you’ll be savoring it anyways.

holy shit i just realised that the reason why everyone has such cool, pithy noun-based last names in hyperion city is probably bc initial settlers named themselves after what they brought to/ could make on mars. so juno steel, mick mercury, and sasha wire all have the last name equivalents of baker/ potter/ smith!!!
