It's easy to say Digimon started out as a Tamagotchi spinoff so that's why the evolutions work like that particularly in regards to the early seasons of digimon. But SO MUCH of why Digimon is like that can be explained by the fact its a tamagotchi spinoff.
Why do digimon all end in -mon? Probably the same reason all tamagotchi's end in -tchi.
Why were there originally 5 levels named Baby I, Baby II, Child, Adult and Perfect in Digimon? Because its a tamagotchi spinoff and Tamagotchi has five life stages, Baby, a second Baby stage, a Child Stage, an Adult Stage and a Hidden Adult Stage.
Why are Numemon, Raremon and Sukamon all at the same level? Why do they all throw poop for an attack? Why DO digimon poop all the time? Because V-Pet care mechanics.
Why is Vademon's attack a Kiss? Why do Angemon, Devimon, Ogremon and Leomon all have punching attacks? Why is Digitamamon's attack have a heart? Why does Vegimon of all digimon also throw poop? So many metal perfects with missile attacks? Why do Biyomon and Gabumon use Fire Attacks? Why do Betamon, Gazimon and Elecmon all use Electric Attacks? Why are there a bunch of little guys who are also perfects? Because the original V-pet's are all just reskins of each other, and that includes their attack animations.
Why are digimon divided into Data, Virus, Vaccine instead of anything more complex. Probably because it originates in the V-pets and anything more complex would over-complicate a V-pet system.
Why are digimon classified by their habitat? Why are these habitat groups named things like "Deep Savers" and "Nightmare Soldiers" because that's how the 2nd generation of V-Pets were marketed.
What's with the digivices? Aside from being the signature toy for the franchise, V-pet but now season specific.
Why are Digieggs such a recurring thing in digimon? Why do digimon reincarnate? Because Tamagotchi spinoff part of the point of it is that eventually they die so a new one can be born and grow in a different way. The reversible evolution mechanics of the rest of the franchise are milder way of exploring this without integrating constant death into the storyline.
Why are so many digimon recolors? Well actually that ones not because of the V-Pets but because of the video games.
But it's usually because of the V-pets.

I made a high quality version of the bizarre recipe on the Ichijouji's wall! You'll notice it's a mixture of different "versions" from the source screenshots.
