Ditching Dairy (more specifically cheese):
I receive a lot of messages from people who are transitioning to a vegan lifestyle, but they are struggling to eliminate cheese from their diet. Many people have no trouble cutting out meat, eggs, or milk from their diet, but when it comes to cheese, they think “I could never live without it.” Trust me, we’ve all been there. From personal experience, I can tell you that it is possible!
It may seem hard at first. You’re thinking, “I’ll never have pizza, nachos, lasagna, or any “real” food again.” False - you will!! Lucky for you, we are living in 2017. By now, veganism is a trendy and acceptable thing. Not only will you find plenty of vegan recipes online, but you will also find the necessary ingredients in most stores, and you will find vegan options at most restaurants you visit!
Some of the most common ways to replace cheese are through nutritional yeast, cashews, tofu, and alternative cheese brands on the market.
Nutritional Yeast - is a great replacement for Parmesan! It can be used to flavor popcorn, in cheese sauces, or in other seasonings! It’s also a great source of vitamin B-12 (just check that it is fortified).
Cashews - Cashew cheese is a super simple & delicious alternative to cheese! You simply soak cashews in water and then place them in a food processor/blender (and mix with additional seasonings). This cheese is great on pizzas, lasagnas, salads, and really anything else!
Tofu - Tofu is another simple ingredient that can be used to make cheese. It is often used as a replacement for feta or ricotta cheese.
Alternatives - There are also SO many options on the market that can be used as cheese replacements. They have shredded cheese, slices of cheese, blocks of cheese, cream cheese, and more! Here are some of the brands I have found:
Daiya - Daiya is the most common brand that I have seen throughout the stores. They have shredded, slices, blocks, cheesecakes, mac & cheese, frozen pizzas, and yogurt.
Tofutti - They have slices of cheese, cream cheese, sour cream, ricotta cheese, and frozen desserts.
Follow Your Heart - They have shredded cheese, blocks, slices, cream cheeses, and more!
Kite Hill  - SO good! They have soft cheeses, cream cheese, and yogurts.
There are so many other delicious brands, which can be found here!

Homemade vegan pizza one/two/three (or buy premade brands like Amy’s, Daiya, or Tofurkey!)
