Masala Macaroni using Spices and Pasta found at Angelina's Teas INGREDIENTS ▢1.5 cups macaroni ▢1 teaspoon avocado oil ▢2 tablespoons butter ▢1 tablespoon garlic (finely chopped) ▢1 teaspoon ginger (finely chopped) ▢1 spicy green chilies (Thai green peppers) (finely chopped) ▢½ cup red onion (finely chopped) ▢½ cup green bell-pepper (finely chopped) ▢½ cup tomatoes (finely chopped) ▢½ cup green beans (finely chopped) ▢½ cup frozen corn kernels ▢2 tablespoons tomato ketchup ▢2 tablespoons red chili sauce ▢2 teaspoons coconut aminos (can be replaced with soy sauce) ▢½ teaspoon Kashmiri red chili powder ▢½ teaspoon garam masala powder ▢½ teaspoon sugar ▢1 teaspoon kosher salt (plus extra for salting the pasta water) ▢¼ cup shredded cheese (I like using cheddar) ▢¼ cup chopped cilantro leaves INSTRUCTIONS Cook the pasta Bring a medium pot filled ¾ the way up with water to a boil on high heat. Cover the pot with a lid to help the water boil faster. When the water comes up to a boil, add in 1 teaspoon of salt along with the macaroni. Stir the macaroni well so it doesn't stick to the bottom and bring the water back up to a boil. Cook the macaroni according to the package instructions. In the meanwhile, make the masala sauce. Make the masala macaroni Heat a large frying pan on medium heat for 1-2 minutes and add the butter and avocado oil. When the butter has melted, add the garlic, ginger and green chili and cook for 1-2 minutes or until it starts smelling aromatic. Now add in the onions and green bell pepper along with ¼ teaspoon salt. Cook the veggies for 3-4 minutes or until the onions turn translucent. Add in the chopped tomatoes. Cook the tomatoes till they are soft but still holding their shape. Add in the green beans and frozen corn and cook for 1-2 minutes or until they are slightly soft. Now add in Kashmiri red chili powder, garam masala powder, soy sauce, ketchup, chili sauce, sugar and remaining salt and mix everything well together. Drain the pasta when it is cooked and add it directly to the frying pan. Mix everything well together and cook the pasta in this buttery sauce for a 1-2 minutes, so it gets flavored throughout. Top the pasta with the cheese and cover the pan. Cook this on low for 1-2 minutes or until all the cheese has melted. Finally turn off the heat and sprinkle the cilantro on top. Serve hot or at room temperature.

Calendula Petals Most herbs and flowers have a symbolic meaning. Calendula means hopelessness but Rose means love, passion and purity. Perhaps a blend of tea combined with Calendula and Rose petals would mean a tea, which honors those hopelessly in love. The Calendula plant is also known as the pot marigold and as a flowering herb has always been a garden favorite. It botanical name is Calendula - a name which came from the Romans who observed that in their warm Mediterranean climate the colorful blooms were always present. The name originated because the flower could be seen on the first day of each month - the calends. The marigold is believed to have originated in India and seeds were brought to Europe by the early Persian spice traders. The petals are dried and infused to make a hot beverage but they have also been used to make a healthy broth, make a salad more visually appealing and surprisingly have also been used in the manufacture of marigold cheese. The special properties of Calendula as suggested in home remedies are as follows: calendula tea can be used for gastritis and a warm gargle has been used to soothe canker sores. The tea has also been recommended for women with painful menstruation or menopausal problems. For a stimulating bath, try adding calendula petals. Some hair stylists use a Calendula infusion as a hair rinse to bring out the highlights in brunette or blond hair.

Turkish Fish Stew A non-traditional variant of Turkish fish stew that blends various other Mediterranean influences. Ingredients: 3 cups water 1 ½ cups dry couscous 2 tablespoons olive oil 1 small white onion, chopped 1 green bell pepper, chopped 2 cloves garlic, minced 1 cup marinated artichoke hearts, liquid reserved 2 teaspoons capers, liquid reserved 12 small green olives 1 (14.5 ounce) can chopped stewed tomatoes, drained 2 tablespoons white wine (Optional) 1 tablespoon lemon juice 1 cup water 2 teaspoons sumac powder 1 ½ teaspoons crushed red pepper flakes 1 teaspoon dried basil 1 teaspoon cumin 1 teaspoon minced fresh ginger root ground black pepper to taste 1 pound tilapia fillets, cut into chunks Directions Step 1 In a medium saucepan, bring 3 cups water to a boil, and stir in the couscous. Remove from heat, cover, and let sit 5 minutes. Step 2 Heat the olive oil in a skillet over medium heat, and saute the onion and green pepper about 5 minutes, until tender. Mix in the garlic, and continue to cook and stir about 2 minutes. Mix in the artichoke hearts with reserved liquid, capers with reserved liquid, and olives. Stir in the tomatoes, wine, lemon juice, and 1 cup water (or enough to attain desired thickness). Season with sumac powder, red pepper, basil, cumin, ginger, and pepper. Step 3 Bring the mixture to a boil, and mix in the fish chunks. Reduce heat, and simmer 10 minutes, or until the fish is easily flaked with a fork. Serve over couscous. Cook's Note: You can use cod, scrod, or any other mild white fish in place of the tilapia. The first time I tried this salad, I just knew I had to try and recreate it at home. The tangy lemon and sumac flavors make this salad super refreshing and perfect for summer. This makes 2 lunch-sized portions, or 4 side salads. By France C Prep: 15 mins Additional: 15 mins Total: 30 mins Servings: 2 Yield: 2 servings Ingredients: 2 medium Roma tomatoes ½ large English cucumber, peeled and seeded ½ medium red onion ½ cup minced fresh parsley 1 teaspoon ground sumac ½ teaspoon salt 2 cups packed fresh arugula 2 tablespoons fresh lemon juice 1 tablespoon olive oil Directions: Step 1 Cut tomatoes lengthwise into quarters and gently give them a squeeze to remove some of the seeds and excess liquid. Slice the tomatoes thinly and place into a large bowl. Step 2 Cut cucumber into 1/4-inch pieces and add to the bowl. Cut onion into 1/4-inch slivers and add to the bowl with parsley. Sprinkle with sumac and salt and toss to coat. Let sit for at least 15 minutes for flavors to meld, the longer the better. Step 3 Add arugula to the bowl and drizzle with lemon juice and olive oil. Ingredients 4 Servings 1 head of garlic, halved crosswise 1¼ cups plus 2 tablespoons olive oil, plus more for drizzling 8 ounces goat cheese Kosher salt, freshly ground pepper 1 tablespoon black and/or white sesame seeds 1 teaspoon finely grated lime zest 1 teaspoon chopped fresh oregano 1 teaspoon fresh thyme leaves ¼ teaspoon sumac 12 ounces small turnips (about 16), peeled, half quartered, half thinly sliced into rounds 1 tablespoon Sherry vinegar or red wine vinegar Cilantro leaves with tender stems and mint leaves (for serving) INGREDIENT INFO Sumac, a tart, citrusy spice sold in ground form, is available at Middle Eastern markets and specialty foods stores, and online. Preparation Step 1 Heat oven to 350°. Combine garlic and 1 1/4 cups oil in a small baking dish. Cover dish with foil and roast until garlic is golden brown and tender, 45–50 minutes; let cool. Step 2 Remove garlic from oil; squeeze cloves from skins and finely chop to a paste. Process in a food processor along with goat cheese, 1/4 cup garlic roasting oil, and 2 Tbsp. water until smooth (mixture should be spreadable); season with salt and pepper. Divide goat cheese mixture among plates, top with turnips, sesame mixture, cilantro, and mint, and drizzle with more oil. Step 5 Do ahead: Roasted garlic goat cheese can be made 1 day ahead; cover and chill. Bring to room temperature before using. Sesame mixture can be made 4 hours ahead. Store airtight at room temperature.

Turkish Sumac Onions INGREDIENTS 2 large onions 1 teaspoon sumac ½ teaspoon salt ½ teaspoon red pepper flakes, optional ¼ cup parsley, chopped 1 tablespoon lemon juice 1 teaspoon pomegranate molasses 2 tablespoon olive oil INSTRUCTIONS Peel and slice the onions thinly. Put them in a bowl. Sprinkle sumac, salt and red pepper flakes over onions. Gently massage them with your hand. Add in parsley, lemon juice, pomegranate molasses and olive oil. Stir to combine. Serve as a condiment alongside chicken or meat dishes, as a garnish in sandwiches or wraps. NOTES If the onions you use are bitter, sprinkle a little salt over the thin slices and soak them in cold water for 1-2 minutes. Gently squeeze them and drain. This step will remove the bitterness.
