Quinoa summer salad
I went on a really love hike in the sunshine yesterday and took this delicious bowl of colour, to keep me fuelled up! 
Ingredients: ½ cup quinoa, sweetcorn (frozen), broccoli (frozen), berries, cucumber, mixed salad, olive oil, seasoning.
Method: 
Cook the quinoa in a pan with a cup of water. Bring to the boil, then reduce to a low heat. Cook for 15 minutes.
Meanwhile put the corn and broccoli in a pan with water and boil for a few minutes.
Chop up your berries and cucumber and add to a bowl with the mixed lettuce. Drizzle with a little olive oil.
When the quinoa’s done, add it to the broccoli and corn and stir through - season as you like and serve up!
