It is predominantly made of beef with added pork or lamb and seasoned with characteristic spices like coriander, cloves, nutmeg, and black pepper. The term boerewors is derived from the Afrikaans term "boer" for farmer, and "wors" for sausage, symbolising its historical background as a farmer's sausage made of quality meat leftovers.
How Does Boerewors Differ from Other Sausages Such as Bratwurst or Chorizo?
Boerewors differs from sausages such as German bratwurst or Spanish chorizo because it has a distinctive combination of meats, spices, and preparation processes. 
Although bratwurst is normally a ground pork sausage seasoned with mild spices like nutmeg and marjoram, boerewors is ground coarse and has to have at least 90% meat content, with beef accounting for over 30% of the composition. 
Its spice blend is aromatic and warm, dominated by coriander seeds, cloves, and black pepper, unlike the smoky paprika and garlic flavours that define chorizo.
What Makes Boerewors Special in Its Preparation and Ingredients?
Boerewors is specifically defined legally in South Africa to protect authenticity. 
It is required to contain not less than 90% meat and not more than 30% fat, of which beef must form the major proportion of the meat. 
The remainder of the combination generally consists of pork or lamb, and the spice mixture forms an integral part of its nature. 
The sausage is conventionally filled into natural casings consisting of pig or sheep intestines and made up into long, extended coils.
