I went to the HACU Conference over the weekend it was sensational. Here is some of the dinners I had. Chicken airline with sautéed vegetables. The other white fish and beef tenderloin. The sauces and purée were delicious 😋

I went out to the Pumpkin 🎃 Farm in Yucaipa over the weekend. It was a wonderful experience. The farmers showed us around they had over 60 different types of pumpkins and gourds. I learned that each is for different uses. They had one Called a Cinderella 👸🏼 because it’s the sweetest and smooth.

It was a sandwich kind of weekend First one was a roast beef and Swiss on wheat 🌾 bread with sautéed onions topped off with spicy mustard horse radish. Second was steak and eggs 🍳 brew sandwiches with Monterey Jack and chipotle 🌶 mayo.

While I was feeling sick with allergies. I spent time with My mom we made carne asada steak. She said I needed more than just soup. We had fresh pico de gallo. Nopales guisados (sautéed cactus leaf) Spanish rice, beans and queso fresco and a spicy guatillo sauce.

This week I am still perfecting my breads. Ran into pitfalls on my loaves. My cranberry soaked I rum and orange whole wheat burnt 😖I made a bounce back to one made of jalapeños with roasted garlic and sundried tomatoes. It turned out better but not as puffy as I expected. I will continue on…. After all it’s about resilience and not about mistakes we make.

This week I decided I was making bread. 🥖 My baking coach said it would be a sensational idea. I select from 3 recipes and create my own, the results were sensational. I made two loaves each one was about 1 1/2 lbs. They were each a different one had olive oil, roasted garlic and sun ☀️ dried tomatoes 🍅 The second was olive oil, basil 🌿 and sun dried tomatoes 🍅 They were amazing I was filled with happiness. My inspiration.....was San Francisco 👨🍳 bakeries.

This week I recreated one of the sides I learned to prep at Disney. It's a blend of veggies with olive oil, garlic, salt, and pepper. The veggie 🥒🥕I picked up were fresh bell peppers 🌶 an amazing cauliflower hybrid that is purple 🍆 and regular white cauliflower, crispy brócoli. It was just like the original but only better because I made it at home 🏡.😋
