Made venison burgers, homemade fries, and a tomato and cucumber salad for lunch today. Here's how to make it. French fries: Peel Yukon gold potatoes, and then cut into shape of a fry. Put potatoes into deep fryer filled with oil at 350 degrees Fahrenheit. Cook until browned, about 10 minutes. Season fries with salt, pepper, cayenne pepper, garlic powder, and garnish with parsley and paprika. Venison Burgers: Ground venison meat. Season meat with salt, pepper, and garlic powder. Let sit overnight. Form into hamburger patties. Grill for about 15 minutes. Add cheddar to burgers. Pairs well with barbecue sauce. Tomato and Cucumber Salad: Peel cucumbers. Chop cucumbers and tomatoes into bite-sized pieces. Chop up basil leaves. Put vegetables and basil into bowl. Season with fleur del sel, pepper, and garlic powder. Add freshly-squeezed lemon juice onto salad. Add some olive oil and toss all together.

Garlic Mashed Potatoes 1. chop Yukon gold potatoes - 5 lb bag and boil them 2. chop scallions and garlic. 3. In a mixer, add the chopped scallions and garlic, 1 and 1/2 sticks of butter and 1/3 cup of half and half. Add 2 tbsb salt and 1 tbsb pepper. 4. Strain potatoes and add to the mixer. 5. Mix on low until mashed potatoes are done.

Spaghetti Bolognese Recipe: I use @inagarten's recipe for the meat sauce (https://www.foodnetwork.com/recipes/ina-garten/weeknight-bolognese-recipe-1924746) But, I add homemade meatballs to the dish. Meatball Recipe: 1 lb of meatball mix (ground pork, beef, veal) 1/2 cup of bread crumbs 2 eggs 2 tbsb milk 1/2 cup of Parmesan cheese chopped basil leaves Italian seasoning (blend of dried garlic powder, oregano, rosemary, thyme, salt, and pepper) 1. Combine all ingredients into a mixing bowl. 2. Hand mix until ingredients are combined. 3. Form meatballs 4. Boil meatballs in heated marinara sauce (I use @raoshomemade) in a stove pot for about 45 minutes to an hour until meatballs are cooked. Periodically check the meatballs to see if they are done.

Penny's Puffs: A Perfect Appetizer! Ingredients: 1. Preheat an oven to 375 degrees Fahrenheit. 2. Oil a baking sheet 3. Defrost 2 sheets of puff pastry dough (you can buy this frozen. I like Giant's signature select brand) But, if you want to make homemade puff pastry you can find a recipe online) 4. Chop garlic (about 3 cloves), 1 shallot, and mushrooms. 5. In a sauté pan, add 2 tbsb of butter, and the chopped garlic, shallots, and mushrooms. Cook for 7-8 minutes. 6. In a separate sauté pan, cook spicy Italian sausage. Remove the casings and chop the sausage into bite sized pieces prior to cooking. Cook for 8-10 minutes until sausage is browned and done. 7. The puff pastry dough should be defrosted at this point. Cut it into small squares. Add the mushroom mix, the sausage, and chop cubes of Gruyère cheese on top. 8. Bake for 12-15 minutes until puff pastry is golden brown and puffs. 9. Let cool for 10 minutes before serving. Serve with dijon mustard.

Panko-Crusted Salmon in a Lemon, Butter Sauce Recipe: Ingredients: For the salmon: • 4 salmon filets • 1 cup Panko breadcrumbs • Salt • Pepper • Garlic Powder For the sauce: • 1 stick unsalted butter • Juice from 1 whole lemon • Sprinkle of Garlic powder • Dash of Salt • Sprinkle of Pepper • Splash of white wine PROCEDURE 1. Preheat oven to 325 degrees Fahrenheit. 2. Grease a baking sheet or sheet of aluminum foil. 3.Season salmon filets with salt, pepper, and garlic powder. Rub spices into meat. 4.Put panko breadcrumbs on a plate. Dip salmon into breadcrumbs. Cover all sides of salmon with the breadcrumbs. 5.Put breaded salmon onto baking sheet and bake for 14 minutes. Make the sauce as the salmon bakes. 6. For the sauce, use a large Sautee pan and add the stick of butter. Melt it completely. Then add juice from one whole lemon. Put rind of lemon in pan. Add a splash of white wine and the seasonings. Cook on high heat until a reduction is made. This should take about 5 minutes. 7. When salmon is fully baked, take it out, and using tongs, put it in sauce. Cook it in sauce for about 2-3 minutes, flipping the salmon filets once or twice. 8. Take salmon out of pan, top with sauce, and serve on a bed of vegetables or rice.

Chicken Piccata: Recipe: Ingredients: for the chicken: thin-sliced chicken breast cutlets italian bread crumbs 1 tbsb garlic powder 1 tsp dried oregano 1 tsp black pepper 1/2 tsp salt 3 eggs for the sauce: capers 1 stick of butter juice of 1 whole lemon splash of white wine dash of chicken stock 1 tbsb salt 1 tsp pepper Procedure: 1. tenderize (pound) the chicken with a meat mallet until chicken breast is 1/2 inch thin all around. Trim excess fat around the chicken. 2. Crack eggs and beat. Add 1 tbsb of water to egg mixture. 3. Combine italian bread crumbs and season bread crumbs with seasonings in recipe. Mix mixture. 4. Dip chicken into egg mixture and then coat with breadcrumbs. 5. In a sauté pan, over medium heat, combine olive oil and fry chicken for about 10-12 minutes until golden brown. Turn once half way through. Check to make sure chicken is done. 6. Remove chicken. Pat excess oil. Wipe excess oil from pan. Combine ingredients to make the sauce and cook until a reduction is made and sauce thickens. 7. With stove off, put chicken into sauce and top with capers. 8. serve with mashed potatoes (recipe is on another post) and caramelized onions (recipe is below) . Garnish with a piece of lemon and parsley ~ Caramelized Onions Recipe: Ingredients: 3-4 chopped red onions 1/4 cup of dijon mustard 1/2 cup of olive oil 1 tbsb salt 1 tsp pepper 1 tsp garlic powder splash of apple cider vinegar Procedure: 1. Preheat oven to 400 degrees. Put onions on a baking sheet 2. Add marinade ingredients together and stir until an emulsion is made. 3. Pour marinade over onions. 4. Bake for 25-30 minutes. Check often and continue to mix the pan until onions are caramelized and browned.

Meat Lasagne (this makes enough for an army 😂) Recipe: Ingredients: 2 packages of lasagna noodles ground meatball mix (pork, beef, veal) 3 spicy Italian sausage links 1 container (16 oz) of whole milk ricotta cheese 1/2 cup of minced onion 3 cloves garlic, crushed 2 cans of @raoshomemade marinara 3/4 lb of mozzarella cheese 3/4 cup Parmesan cheese, grated basil leaves for garnish 1 tbsb salt 1 tbsb pepper 1 tsp garlic powder 1 tsp oregano Procedure: 1. Salt a pot of water. Bring to a boil. Add lasagna noodles. Cook per directions on the package. 2. In a large sauté pan over medium heat, sauté ground meat and sausage. Be sure to remove the sausage casings and chop the sausage before cooking. Season with the salt and pepper. Cook until meat is browned (about 10-12 minutes). Then, drain excess oil. 3. In same pan, combine marinara sauce cans, and add the oregano. Cook for 5-7 more minutes. 4. In another pan, make a white sauce. Melt 1 stick of butter and add 1/2 cup of flour. Stir until flour is cooked. Add 1/2 cup of milk and stir until sauce thickens. 4. Strain pasta and acquire an oven-safe baking dish. Preheat oven to 375 degrees Fahrenheit. Pour the white sauce on the bottom of the dish. 5. Layer the noodles, meat sauce, and then add mozzarella, Parmesan, and ricotta cheeses. Continue to layer like this until pan is filled and lasagna is assembled. 6. Cover pan with aluminum foil and bake in the oven for 25 minutes. Remove foil and then bake for another 25 minutes. 7. Let cool for at least 20 minutes before cutting and serving.

Lobster Rolls with Slaw Recipe (makes 4 rolls) Ingredients: for the lobster mixture: meat from 4, 1 1/2 lb, steamed lobsters lemon juice from 1/2 of lemon 1/3 cup of mayo 1 tbsb salt 1 tbsp pepper 1 tsp Worcestershire sauce chopped scallions chopped tomatoes chopped romaine lettuce for the rolls: hot dog buns butter for the slaw: coleslaw vegetables (cabbage, carrots) 1/2 cup mayo 1 1/2 tbsb apple cider vinegar 2 tsp sugar salt pepper Procedure: 1. remove lobster meat out of shells. Chop it up into bite sized pieces. 2. in a bowl, combine lobster meat, and lemon juice from 1/2 of lemon, 1/3 cup of mayo, 1 tbsb salt, 1 tbsp pepper, 1 tsp Worcestershire sauce, and chopped scallions. Mix until well combined and set aside. 3. Make the coleslaw by combining and mixing ingredients. Set aside. 4. Prepare a baking sheet. Grease it. Melt a stick of butter. Using a basting brush, baste the rolls with butter. Bake at 350 degrees Fahrenheit for 5-7 minutes until rolls are toasted and golden brown. 5. Add lobster meat mixture onto roll. Garnish with lemon wedge, tomatoes, and lettuce. Serve with potato chips and the coleslaw.
