Brownie cookies http://www.theboywhobakes.co.uk/recipes/2018/3/29/j9cnerut0as1ec0fcdiawsc4usi7ss Melt butter (125g, a little more than 1stick) and chocolate (200g dark) in a bowl, 1min in the microwave (stir in between). Stir until emulsified. Add 2 eggs and 250g sugar (half white half dark brown) to mixer bowl with whisk. Mix 5 min, then add chocolate and mix 1 min. Add 130g flour, 1tsp baking powder, 3tbs Dutch cocoa (replace half with mole), 1/4 tsp salt. Mix into egg/chocolate. Spoon onto cookie sheets, heaping tablespoon. Re-roll into loose balls. Sprinkle sea salt on top. Bake 12 minutes. Let sit for 20 min to cool. Will be puffy and deflate after. Makes 16 easily, can do 20 smaller ones. -try with Mexican drinking chocolate

Chocolate brioche - adapted from David Lebovitz's chocolate bread recipe - cut recipe in half - used several different kinds of chocolate chips - used walnuts, toasted - half natural cocoa half black cocoa - rose pretty quick,only needed 1.5 hours - separated into 16? Pieces for second rise - no obvious second rise Try using egg wash for color

Adapted from smitten kitchen's spinach and cheese strata - used jalapeno pepper bread - cut recipe in half, 40ish minutes bake time - only two layers of bread - used spinach, asparagus, leeks and carrots - added smoked paprika and crushed red pepper flakes - whisk egg and milk together properly. Mustard sank to the bottom - done when not liquidy on bottom (clear dish helps) - set overnight

Strawberry and Rhubarb crumble cake - ottolenghi's sweet One of the best coffee type cakes I've ever had - don't skip out on the crumble topping - cut recipe in half for pie plate and that was fine - use less of starch if not using cornstarch -baked almost full time, until bottom is golden brown - cut 1/3 sugar in cake

Chocolate peanut butter cookies - smitten kitchen - use less powdered sugar in peanut butter, definitely freeze first before rolling - cookie was a bit hard, not chewy - used 1/2 black cocoa and flavor was fine but not amazing

Strawberry balsamic tart - from Four and Twenty Blackbirds book - halved the recipe - used dough from sk's hand pies (1/2 whole wheat), would recommend using normal pie crust dough - flavor good, sugar needed to balance out the balsalmic - crust soggy

Hot cross buns - Thomas Keller Mixing 30 min in stand mixer was fine No spices in the dough! Added cloves and nutmeg to the icing Took 25 min at 350, no cover needed

Rhubarb cream cheese hand pies - smitten kitchen -like a pop tart! -halved flour with white wheat -made half of recipe -used simmered down rhubarb instead of recipe Don't overfill!!!! Made them 2 X2 Baked 10-15 min, no egg wash

Chocolate Pavlova with blueberries -chocolate Pavlova from Smitten kitchen -whipped cream/yogurt from Ottolenghi's cinnamon fig Pavlova -added blueberries, slivered almonds, and honey -blueberry jam also underneath Pavlova - old eggs fine, just bring to room temp - melt chocolate, don't bother chopping - 3 smaller rounds made instead of one large one -baked at 300 for 30-40 min, left in oven with door cracked for 4 hours -still fine next day after time in fridge

Cut sugar, cut dates in half Frosting makes the cake Torch bananas then put on cake, otherwise frosting will melt Cut down baking time Dates will sink Bananas probably don't need to be sliced, can be mashed

Blueberry scones - cut sugar in half - bake for entire time (20 min), they need to be brown all over - cut recipe in half and make 6 scones, otherwise they will be ginormous
- cut down on baking powder, you can def taste it

Cinnamon cream brioche - Joanne Chang’s Flour, Too
Made smaller rounds. Be sure to stretch very thin in center. Pressing from middle outward looked good, so did rolling out and folding edges upright or over. Galette style was too thick. Did not need to worry about spilling over. Used leftover chai creme brulee filling instead of creme fraiche. Baked 20 min until edges golden.

Castillo bread - ottolenghi
Used Joanne Chang's brioche recipe, 1/8th portion. Rolled out to 1/8tg inch thickness. Used TJ's premade pesto. Salami flavor a little overpowering. Did not need extra salt or pepper. Gouda underwhelming, could have used any cheese. Pieces size didn't seem to matter, rolled easily. Did not really rise during 45 min wait. Added glass to middle to hold shape, should have removed halfway through. Baked for 20 min, was very brown but good texture. Easy to cut through.

Chocolate banana pecan cookies - ottolenghi’s sweet
Left overnight in fridge instead of just two hours. Used bittersweet chocolate disks cut into 4ths instead of chocolate chips. Strong banana flavor. Used almost entire bag of pecans. Cut sugar in half, coated with powdered sugar. Frozen half batch.

Chai creme brulee tarts - ottolenghi’s sweet
Left chai spices in cream for 3 days, used mem tea masala chai rather than suggested spices. Very strong. Could have used less. Used muffin tin rather than tart pan, worked well. Torched easily with even layer of sugar.
