Happy Halloween! 👻🎃 Today I made Shrimps & Porcini Cream Sauce in Squid Ink Pasta. I bought fresh Porcini (Steinpilze) from Kleinmarkthalle Frankfurt last weekend - the umami earthy taste is just amazing. 🍄 Recipe: (serves 2) 100g onions, chopped 3 cloves garlic, chopped 300 g shrimps 100 g porcini (steinpilze), chopped 100g creme fraische Red wine, olive oil, salt, pepper, italian herbs Cook squid ink pasta. Set aside. Sauté onions in olive oil until caramelised. Add garlic until brown. Add shrimps, italian herbs, salt & pepper until half cooked. Add porcini mushrooms. Pour some red wine. Last, mix in the creme fraische and a little bit of water. One of the best dishes I made this year. 🤤😻 (at Heidelberg, Germany)

It’s been a year since I changed my eating habits and I have never been so happy with the results. Cutting off processed food & sugars at the beginning was difficult, but now I don’t even feel like I am “on a diet”, because healthy, whole food tastes so much better! I eat 6x a day (macros at 30c, 35p, 35f) , have cheat meals, workout 3-4x a week and walk at least 8km everyday~ and I feel more energetic than ever. My top 3 lessons: 1.) The effort is 70% diet and 30% exercise- you have to know what & how much you are eating: portion control & proper macros ratio are important. 2.) Girls, lift heavy. You will not bulk, you will shape your body in a feminine way! 3.) Be kind to yourself- rest if you have to, eat that pizza you’ve been craving for days- it is not a race, but a self discovery of what diet works for you in the long run. (at Heidelberg, Germany)

Bringing the Tropical Vibes on my Birthday Dinner by cooking Boodle Feast! 🇵🇭🌴🌊 Lechon Kawali, Chicken Inasal, Nilasing na Hipon, Insalatang Itlog Maalat. 6-Hour Slow Cooked Pork Belly then roasted until crispy, soy sauce & lemongrass marinated chicken bbq, Buttered Shrimps, and Salted Egg Salad on a bed of rice served on a Banana Leaf. Filipino food is probably one of the most labor-of-love intensive cuisine. You have to prepare days before a feast, slow cooking & marinating. Special thanks to @ishirodriguez for making the salted egg from scratch (takes 3 weeks!) & for being an awesome chef partner. Long weekends call for slow food. Tonight we made Seared Zuchinni Rollups with Jamon Serrano, Sheep Cheese, Thyme Rosemary Yogurt, Sundried Tomatoes, & Roasted Walnuts. Recipe (Makes 16 rolls): 2 zuchinnis 8 slices Jamon Serrano 100g sheep cheese 3 tbsp plain yogurt 50 g sundried tomatoes 30 g walnuts 1 sprig fresh Rosemary, 2 sprigs fresh Thyme 1.) Cut zuchinni lengthwise, sear in hot pan with olive oil, set aside. 2.) Finely chop walnuts, sundried tomatoes, thyme and rosemary 3.) Roast walnuts on the same pan used for zuchinni 4.) In a bowl, mix sheep cheese, yogurt, sundried tomatoes, walnuts, thyme & rosemary 5.) Assemble: Lay Zuchinni, Jamon Serrano & the cheese mixture on top of each other. Portuguese Sardine Protein Pasta with Garlic, Lemon, Chili & Olive Oil My brother @pepehf was so nice to bring sardines for me from Portugal 🇵🇹 Thank you! Recipe: Serves 2 2 cans Sardine (10 fishes) with the olive oil in can 5 cloves crushed garlic 1 tsp chili 1/2 lemon (juice) 250g cooked protein pasta Salt & pepper to taste Sautee garlic until toasted in olive oil, add sardines including the oil, mix in protein pasta, add chili, lemon juice, salt & pepper - ready in 15 mins 👌🏻 (at Neuenheim, Baden-Wurttemberg, Germany)

Autumn means mushrooms season. Hiked up 460 m around the forest of Königstuhl and saw 12 kinds of mushrooms. I think it's a beautiful thing to crouch down to the dirt and observe the world at the same level as these wonderful species. 😍 This mushroom is called Amethyst Deciever, it is edible but can absorb arsenic in the soil. No authentic ramen in Heidelberg? No problem, make your own with your bff. 🤗 The Ish x Cla Homemade Tantanmen Ramen 🍜 Part 1: soup base In a pot, simmer chicken legs, onion leeks, carrots, shallots, salt & pepper in low heat for 3 hours - yes, it takes that long to get the collagen out if the bones. Part 2: ramen eggs & noodles 1.) Cook eggs for 9 mins in boiling water. Peel them and Submerge in a 1:1:3 mixture of mirin, soy sauce & water 2.) Boil noodles until al dente. Set aside. Part 3: The final cooking 1.) sauté thinly sliced ginger, garlic & shallots in sesame oil 2.) add the ground pork & beef, add salt or soy sauce to taste 3.) add the chicken stock you made 4.) add sesame paste & chili bean sauce (depends how spicy you like it) 5.) add sesame chili oil Part 4: Assembly 1.) add noodles in a bowl 2.) add the meat 3.) add the soup 4.) top with eggs, onion leeks & seaweed 🍜🍜🍜 (at Neuenheim, Baden-Wurttemberg, Germany)
