when you are cooking a recipe you dont know very well so you have to run through the what if troubleshooting tree in your head every single time you make a slight deviation. will i be killed if i leave falafel mixture in the fridge overnight
#im scared of leaving falafel mixture in the fridge overnight bc i know that if you let it rest a little#the starch from the chickpeas makes it easier to mold into balls but idk about letting it rest a LOT#and if i do this properly i wont need flour as a binding agent so itll be gf and thats nonegotiable#but if i shape it and leave it in the fridge overnight it WILL dry out i know this#and i dont think ill have time to wrestle with my mixer after work tomorrow..............if i had a reliable food processor this wouldnt#even be a question id just soak overnight and make everything fresh tomorrow#even just the idea of getting home from work and immediately starting up the oil reminds me of my mom though :)#and even further. when you get one piece ha ha of good news and it cuts through the fog of a difficult wknd and you start crying#and now you can focus on the falafel
