Fusion-Diet in covid 19
Hallo guys/girls and all ;
i am not a doctor but believe in new and something different to eat ,wear and to look . what i mean to say is in this pandemic time our body requires lot of immunity to remain like a champion fighter against this pandemic.
i will be coming up with various fusion recipes which will be Vegan,Meat (Red /White) Seafood /Sweet water fish and lot more which might have loads of calories,Protein,Carbs ,and will be cooked with Spices ,green chillies,Butter,Pure desi ghee ,mustard oil and other stuff which might look like a very heavy on your daily routine diet .
Friends ; i feel controlling on diet is beginning of destruction of your health , it is always advised to do the needful to digest them and allow our body to take all necessary minerals,nutrition and vitamins from our normal diet. method of digesting heavy /loaded diet is exercise ,Yoga and no stress habit.
and you will have immunity in our body which will not allow any foreign body to come closer even to us . 
i am sure we will start enjoying our life and change our daily diet routine along with the activity .

Storing fruits and vegetables
Dear friends;
I came across a very important study about storing fruits /vegetables . it struck my eyes at once as,I personally have noticed  in my kitchen vegetables and fruits been wasted just because we did not know the technicality of storing them in a suitable environment/space.  
The reason is ethylene, a gas from some fruits and vegetables that speeds ripening. It’s a big reason for food waste. So store ethylene-emitting foods away from those that are sensitive to it.
Down below in the table I have tried to organise few of those very delicate ones.

Happy Catfish Month ( August ) Machhari  ( Sweet water catfish curry )

Dear audience;
I am here for you with an exquisite north Indian sweet water Cat fish curry cooked in traditional black and yellow mustard gravy with a twist (A fusion recipe from Fusion Rasoi)
Friends every time we look for an authentic standard or lost recipe and it is not that exciting .i try to bring to you those recipes with a fusion of various process and spices to enhance the flavour and taste in total .
I try these fusion recipes in my kitchen at home several times before it is presented to you . I assure, you can try it right away with a new enthusiasm for the old recipe .
My tips for this recipe would be to add a bit of more spiciness’ by adding green chilli paste and if you like sourness you may add a teaspoon full of imli (tamarind) paste just before cooking is finished.
Enjoy the step by step recipe:
Ingredients :
·         One KG sweet water fish ( Rohu,Katla,Pangas,Banguri(Walking Catfish)              clean it, slice it and wash it with salt water. Keep a side.
·         Three medium size onions (200 Gms.)
·         6-8 Green chillies
·         Two medium size tomatoes
        (Onion, chillis and tomatoes to be chopped )
For marinating of washed cleaned sliced fish :
·         8-10 garlic flakes peeled,
·         One inch ginger,
·         3-4 green chillies
·         3-4 slices of onion
·         Pinch of salt
        (Make a paste of it all )
For Curry /Gravy/Jhor :
·         One tablespoon of black mustard seeds
·         One tablespoon of yellow mustard seeds
·         One tablespoon of posto seeds (poppy seeds,khus-khus)
·         One teaspoon of whole jeera seeds,
·         About half teaspoon of fenugreek seeds,
·         12-15 black pepper corn,
·         3-5 cloves with flower,
·         Mustard oil
·         Green coriander leaves
(Soak all these spices in water for about 30-45 minutes leaving oil and green coriander. Grind the spice mix on a stone grinder )
Procedure /Method of marinade, frying fish and finally cooking the curry.
1.        Marinade the cleaned fish with the ginger-garlic paste about two tablespoon and one tablespoon of curry spice mix in a basin add one tablespoon of red chilli powder ,one teaspoon of turmeric and salt for the fish . mix well ,cover and keep a side.
2.        In a deep pan/kadahi (preferably an iron kadahi) add about 4-5 tablespoon of mustard oil after the pan is hot enough. Once the oil is smoking, sprinkle a pinch of yellow-black mustard, add green chillies and the garlic-ginger paste which is left after marinade ,sauté it till it is cooked ,add the spice mix for curry and fry it till the spice is fried and oil floats on top . now add one tablespoon each of coriander powder, turmeric ,red chilli powder and salt to taste  sauté it by adding half a cup of water in regular interval for about 7-10 minutes. Once the spices are cooked and oil is separated add chopped onion and tomatoes, cook it till onion is dissolved add more water and cook it for about 5 minutes .
3.        Till the time curry is boiling on slow flame shallow fry the fish in mustard oil in a flat bottom non-stick pan if possible.
4.        Add the fried fish in the curry cook it for 3-5 minutes add green coriander chopped and taste the salt for taste.
Machhari (Fish curry) with fusion recipe is ready to eat with rice.
Pls. Note : it is advised and is my  experienced too that, while frying and cooking do not cover the pan ,the mustard masala goes bitter in taste.

In science, fusion is the process of merging atoms together to create energy. 
Referring to food or cooking which incorporates elements of both Eastern and Western cuisine.
Foods based on one culture, but prepared using ingredients and flavours inherent to another culture, are also considered forms of fusion cuisine. For instance, Dosa made with a filling of chicken cafreal (A Portuguese /Gonese famous chicken preparation)  and grated cheddar cheese served with coconut salsa and sambar can be  marketed as "Chicken cafreal dosa".
According to its concept, fusion food combines ingredients and cooking methods of two or more regions. ... Today, fusion food is popular because it offers culinary adventures based on unique and distinctive tastes, bringing more colour to mainstream culinary culture

done with passion there is no commercial gain kept in mind while presenting. oh... fries are sweet potatoes mind you and taste with look of sour cream is out of hung curd ,bread is whole wheat and three other grains mixed .overall its a healthy and light dose for anytime of the day,
