What kind of situations would cause Odin and Niles to lose their usual composure? As in, what would it take for Odin's theatrics to die down, or Niles to be serious?

They’ll both be serious with their daughters, although Niles is the first to become serious, while Ophelia has to ask Odin to be. That’s canon actually from their respective supports.

But…there was one time they were serious with each other.

“A silkwyrm? Really! You told Kagero you could turn her painting…into a silkwyrm! Haha!”

“Sh-shut up, Niles. I’ll get it to work. Keep holding it. The great blood that flows within Odin Dark’s veins are a serum that can move the heavens and earth. One portrait shall not best the vicegrip I possess on the magical arts.”

“Your ‘spells’ are all a joke, Odin. No offense, but nothing you try to do ever works. Whatever ‘heroes’ progenerated your lineage must not have earned the titl-”

“Say that again, Niles. I dare you.”

“You….you made the silkwyrm come to life…Odin, I-”

“The blood of heroes who died so I may live flows within me. Do not make light of my lineage or I shall strike you down where you stand.”

“I….yeah. I won’t. Sorry, buddy, I took it a little too far. You clearly had some misfortune in your past and I don’t want to make you relive that.”

“…”

“No, really. I never knew my parents. It was a rough life I had, but you seem like you’ve seen it all. I don’t know what you’ve been through but I see genuine fire in your eyes. I’m truly sorry for dredging it out of you.”

“I…thank you Niles, it’s a rare sight to see you be remorseful.”

“Yeah, well, I’m crude not tactless.”

Odin also gets serious about naming things, his friends and liege, Niles, his family, but also, swordsmanship. He’s not the best sword fighter in the army, but he’s certainly up there, shocking everyone. On a good day, he can best Hinata, Laslow, Selena, and even Xander.

Niles is serious about safety oddly enough. He won’t let people charge in with reckless abandon. If he sees someone put on their armor wrong or their weapon is frayed he’ll berate them, but he won’t let them fight until it’s fixed.
