Were Hyssop’s venom glands affected by the accident at all? When he’s stressed, does steam come out of the split in his face too?
The incident that split his face also damaged the muscles involved in controlling venom release and swelling in the area damaged the glands themselves, causing his body to leak venom into his wounds. So they removed them.
While the magic causing the problems solved a lot of the issues in his face it didn't restore his venom glands so he still doesn't have them.
Most don't notice, not only because there's so much else strange about him, but because his general demeanor makes it seem like he's simply never felt threatened or angry enough to display venom steam.

Is it dangerous or unsafe to wake an hibernating Dryad?
The reason dryads have to hibernate in the winter is because the tree they're bonded to is netting them a lot less magic, because it has dropped its leaves. It's basically a calorie conservation mode to deal with limited resources.
When a dryad is woken up from hibernation it can cause them to expend more of their limited energy reserves. How much danger they are in because of an awakening depends on how long they were awake, if they were made to move a lot and if they were scared.
Small awakenings, especially if they didn't move much, are usually not an issue - but if they woke up because of an emergency situation and panicked and were forced to move a great deal to handle it, that can be a problem. Using up a lot of their limited reserved can leave them in a situation where they may starve through the rest of the winter.
So Renwick and his insomnia is mostly just annoying for him, since he remains calm and still despite still being conscious - but a dryad waking up to deal with a fire could put them at risk of not surviving to see spring, just because of the panic and movement alone.

Where on the family tree would laughing dragons be?
When I drew that last year I was thinking a lot about weasels but since then have been thinking they gotta be an armadillo relative, maybe not in cingulata since they don't have the full shell, just closely enough related to have the osteoderms (the false teeth but also scales on their arms and feet) - I could have made them a pangolin relative of course but the mix of fluff and scales reminds me of pink fairy armadillos

How many sophonts are in your world? Are there any you want to add but haven't?
Leaving aside humans and human-derived beings like book animals and those with magical matrix malformation (Peter and Juniper), current canonical count is six - Saratoans, alligator hydras, dryads, L. dexter bees, magiphages, and Agents. 4 natural species and 2 that are closer to "phenomena" derived purely from magic rather than species.
as for want to add - I've been wanting to dig "laughing dragons" back up (I haven't posted about them in like, ten years?) - I will probably aim for a new name for them when that happens. I've been noodling with a redesign for years just haven't hit on something that clicked yet.
Here's something I drew last year as one of my redesign explorations
(They are plumbers so they have opinions on things that cause them more unnecessary work)
With this idea they'd have another variant that is born without the false-smile but also without eyes. I was thinking it could be along the lines of that bird with four sexes, where the two variants largely prefer to hook up with both different sex and different type. I think I was getting somewhere with this design and ideas but need to work on it more it feels like it's not quite there yet.

Would Saratoans and alligator hydras consider themselves dragons, or is it more of an out of universe descriptor?
In-universe, Saratoans call themselves dragons and the alligator hydras don't - it's more common in Saratoa to refer to them as dragons because technically "Saratoan" includes humans born in that area too. Saratoans call themselves "people" or similar 99% of the time until it's time to clarify the distinction between themselves and the other sophonts in their setting, that's when they will call themselves or each other dragons.
The hydras are rarely referred to as dragons in-universe because of the association with Saratoans.
Out-of-universe I happily tag them "dragon" (when I remember) because regardless of what I call them I figure people who like dragons will likely want to see them.

I've been dissatisfied with how alligator hydras express emotions for a while, wanting to give them more ways to show emotion without leaning too hard into 100% human expressions but still remaining human-readable.
I've settled on them using color change to depict and reinforce emotions, with melanophores as above doing the heavy lifting for warning and distress signals
