Do any of the GG characters who only go by one name (i.e. Baiken, Jam, Johnny, Bridget) have canon last names?

Most of this information is either obscure or not revealed yet, but I’ll try and answer your question:

御津 闇慈 (Mito Anji): “Shade from a Noble Haven” he also goes by the nickname Kakukyaku (嚇嚇) “Glorious”.

梅喧 (Baiken): “Boistrous Plum”

蔵土縁 紗夢 (Kuradoberi Jam / “Cloudberry Jam”): “Fragile Dream of a Shop by the Border"  (lol her restaurant gets destroyed a LOT! it’s in her NAME!!!)

Johnny Sfondi: Ky Kiske addresses him by his full name directly in the GGX Drama CD.

May: May’s an orphan, so it’s unlikely she’ll obtain a last name. May’s name originates from Brian May, a member of Queen.

Bridget: He has yet to reveal his last name.

Testament: He was adopted by Kliff Undersn, but most likely wasn’t given his Stepfather’s surname.

イズナ (Izuna): I’m assuming his name is derived from 狐 (Kitsune), a Fox.

Zato=ONE: "Zatoichi” the Blind Swordsman, not sure if this is his real name.

Venom: Venom “inherited” his name from his household…otherwise his real name is unknown.

Slayer: Probably a codename.

Potemkin: No idea, unrevealed. Named after a battleship.

Gabriel: Again, no idea…probably won’t be revealed.

Zappa: Last name is unknown…but it originates from Frank Zappa the drummer.

Frederick: No idea…but the name originates from Freddie Mercury the lead singer of Queen.

Aria: No idea. Aria is a type of song.

Crow Kuruwaba: Probably not his real name.

Raymond/Judgement: No idea on his full name…his later name is something he came up with himself.

Raven: His real name was probably lost to time, so he gave himself a new one. His nickname is “Karasu” 鴉 which means Raven or Crow.

The rest are mostly Gear names that were either self-named or given by others, mostly rock references. Any other names you find are minor characters. Hope that clears some things up for you.

Zetsu = 絶 (also pronounced taeru, tayasu, or tatsu) which by itself can mean “Suppression” or “Stop” or “Death”

Sen = 扇 which is simply a folding fan. It’s also a pun on “Ougi” or “Skill”

Putting the two kanji together bends the pronounciation rules a bit, so instead of “Zetsu-sen” or “Taeru-Ougi” “ you get "Zessen” 絶扇 “Suppression Fans”.
