~ VEGAN | Potato Leek Soup Recipe ~
110 calories | 3,5g Protein | 1g Fat | 23g Carbs per serving (makes 6)
Time needed: 1 hour
What you need:
~ 4 medium leeks
~ 1 small onion, chopped
~ 2 medium russet potatos
~ 1 tbsp flour
~ 1 tbsp vegan butter
~ 900ml vegetable stock
~ 120ml soy or almond milk
~ Salt and pepper
How to:
1. Wash the leeks and chop them up. Peel the potato and cut it into cubes.
2. In a pot, melt butter and add the flour, mix it well with a spoon. Add vegetable stock, onion leek and potatos and bring it to boil. Then cover it and let it simmer for about 25 minutes.
3. Pour the soup into a blender and blend until it’s smooth, slowly adding the milk. Then adjust the taste with salt, pepper and seasoning to your liking.
Tip: Can be made it advance and kept in the fridge for up to 5 days!

~ VEGAN | Mushroom Soup Recipe ~
Got this recipe idea from @balleriana who already posted a very yummy recipe that is even lower cals than this one!! ♥
112 calories | 12g Protein | 2g Fat | 15g Carbs per serving (makes 2)
Time needed: 25 minutes
What you need:
~ 250g white button mushrooms
~ 250g portobello mushrooms 
~ 1 onion, chopped
~ 230ml vegetable broth
~ 230ml almond milk
~ 1 tbsp flour
~ ½ tbsp soy sauce
~ Salt&Pepper
How to:
1. Spray a pot with non-stick spray and fry the onions for about 5 minutes. Slice the mushrooms and set the onions aside. Then add mushrooms to the pot and let it fry for 5 more minutes.
2. Stirr them together and fry for another 10 minutes, squeeze the mushrooms down so the water comes out of them. Add salt and soy sauce.
3. Mix the flour with the vegetable broth and add to the mushroom mix, stirr very well then slowly add the milk.
4. Let it cook for another 15 minutes with the lid on. Then season with pepper and if needed more vegetable broth and serve.

🥗 48 CAL MINI OMELETTE-QUICHE 🥗 This is honestly one of the easiest recipes in the world, it’s super simple, super yummy and is full of vitamins. I love these when I can actually be bothered with breakfast because it tastes so good and it will happily keep for a couple of days in the fridge. It’s delicious, vegetarian and you can’t go wrong with less than 50cal a quiche!
🥗 INGREDIENTS 🥗 -4 whole whisked eggs -4 whisked egg white -Veggies veggies veggies! Use whatever you like but some of my favourites are capsicum, mushrooms, spinach, onion, coriander and garlic. Find some flavours that you love!
🥗 METHOD 🥗 1. Whisk all your eggs and egg whites together really well in a measuring jug 2. Dice your veggies really well and set them aside 3. Get out your frying pan, add a titch of oil and sauté those veggies until they’re soft. 4. Pour the veggies into your egg jug 5. Now pour that into small muffin tins (or into a brownie pan to slice up later!) 6. Bake that for 15 minutes or until golden 7. Enjoy!

Flourless low carb brownies (3 ingredients only!) for Sunday mornings!
• 100 g of cocoa powder • 2 eggs • stevia extract • 300 ml of water (doesn’t count, right?)
Boil cocoa and stevia in a hot water until dissolved. Put aside, let it cool down a little. Whip the egg whites (you may want to add some salt or lemon juice to make the process easier, but this it depends on you only), also put aside. Stir the yolks into the chocolate mixture, then add the whites. Bake for 8 minutes at 200C. Cut into squares, serve cold 😉
Secretly paleo, vegetarian, gluten free, grain free, low carb, sugar free and low calorie :)

Time needed: 20 minutes
What you need:
~ 60g all purpose flour
~ ½ tsp baking soda
~ ¼ tsp salt
~ ¼-½ tsp cinnamon
~ 1-2 tsp sweetener (depending on how much you like/what you use)
~ 59ml water
~ 28g vanilla soy yogurt
How to:
1. Mix all the  dry ingredients together, then add the wet ingredients and whisk until it’s a dough.
2. Bake at 180°C | 356°F  for 10-12 minutes, until they are nicely browned. Take them out and let them cool for a while, then enjoy!

🍜Low Calorie Egg Ramen Noodles🍜
Shirataki noodles (20) 1 tsp veggie bouillon (5) 1 Fried Egg (78) ¼ cup Mushrooms (4) ½ carrot chopped (11) ½ celery stalk chopped (6) 1 handful mixed greens (5) Salt & pepper to taste (0) 2 tsp teriyaki sauce (10) Total: 139 kcal
1. Boil water on the stove 2. Once boiling add Shirataki and bouillon and cook for 2 min 3. Place finished shirataki into bowl 4. In a pan on medium heat, add salt, pepper, and a dash of water, and add the chopped veggies. Cook for approx 3 mins 5. Stir in veggies into bowl of shirataki 6. Fry the egg. place it on top of your stir fry, top w a pinch of teriyaki sauce 7. Enjoy 😊✨
