For me it would be capybara. That way vegans could have an ethically dog-sized pet that only wants/needs to eat veggies, they're already chill enough that domestication would not be hard and overall risk of animal attacks from them is low. And like dog-friendly cafés, there could be capybara-friendly public pools to swim with the giant cavies.

this might be because I’m a family law lawyer and also an old crone who remembers when marriage equality wasn’t a thing (as in, marriage equality only became nation-wide two months before I went to law school), but I have Strong Feelings about the right to marry and all the legal benefits that come with it
like I’m all for living in sin until someone says they don’t want to get married because it’s ~too permanent~ and in the same breath start talking about having kids or buying a house with their significant other. then I turn into a 90-year-old passive-aggressive church grandma who keeps pointedly asking when the wedding is. “yes, a divorce is very sad and stressful, but so is BEING HOMELESS BECAUSE YOU’RE NOT ENTITLED TO EQUITABLE DISTRIBUTION OF MARITAL PROPERTY, CAROLINE!”

-allows us to explore the political implications of the Diamonds ceding their power
-Lars still needs to grieve losing his old life-- including his actual literal death.
-Rhodenite's story. Oh My Stars We Were Robbed when they cut this from SUF.
-We could see the components of Fluorite, say if they have to unfuse to slip through a tiny gap the other off-colors can barely squeeze through
-Characterizing the Twins of Rutile-- both together and as individuals joined at the hip.
-Padsperacha. Just more Padsperacha. I love her so much, I need her to continue using her faulty future vision for gags, plot insights and dramatic misunderstandings
-More conflicts with Emerald? Redemption arc? Yes please???
-More/New gems, either as villains or just side characters? It's more likely than you think.
-Animated Pulp Scifi with a chance of musical numbers. My inner child is FEASTING.

To go back to the deer thing, they really are natures most random ruminent. Exists on all but two continents (because yes, Africa DOES have some deer) but even species in the same area code (e.g. a whitetail and a moose) can look wildly diffrent. Silen 99.5%, but that .5 is some of the most disturbing noises an animal can make. What runs like a horse, butts heads like a goat, charges like a bull, jumps like an antelope and stands on its hind-legs to throw hooves like a man throws hands? Its deer.
also, deer are simultaneously satan’s weakest and strongest soldiers. they die like hamsters or survive things that really should have killed them. biting the dust from an internal hemorrhage after jumping over a fence or surviving 10+ years with an arrow imbedded in their side. fate rolls the dice on every injury and they either get a 0 or a 20. keeping them alive is hard. killing them is also hard.
