Meatball Sandwiches
Whether it’s game day, a celebration day, or simply a plain old Saturday, meatballs subs make the perfect meal. They’re quick to prepare, especially if you start with the best frozen meatballs, easy to use for feeding a crowd, and they always feel special and festive. Here are two variations of a classic meatball sub you’re sure to love:
Meatball Pizza Sliders
Pizza and meatballs together in one savory sandwich? Yum.
Ingredients
1 bag frozen Farm Rich Homestyle Meatballs
1 jar of your favorite marinara sauce
9 slices fresh mozzarella cheese
1 dozen bakery slider rolls
2.25 oz can sliced olives
8 oz package fresh sliced mushrooms
6 oz package pepperoni
Optional – other pizza toppings such as peppers, onions, ham, etc.
4 Tbsp butter, melted
pinch of garlic salt
1 tsp fresh basil
1/4 cup grated parmesan cheese
  Instructions
•         Cook meatballs per package instructions.
•         While the meatballs cook, slice the slider rolls.
•         Tip: It’s easier and faster to prepare the sliders if you place the rolls close together – touching – on a baking sheet lined with parchment paper. This way, you can work with all the sliders at once rather than one at a time.
•         Spread the bottom half of the rolls with ½ of the marinara sauce.
•         Add a layer of pepperoni followed by the mushrooms and olives.
•         Add cooked meatballs and sliced mozzarella.
•         Cover with remaining marinara sauce.
•         Cover with the top half of the rolls.
•         Mix garlic salt and basil into the melted butter and brush onto the tops of the rolls.
•         Bake the sliders at 350 for 15-18 minutes until the cheese is melted
•         Serve immediately.
   Meatball and Pesto Panini
This recipe includes instructions for a testy homemade pesto, but you can use your favorite store-bought version to make this even faster and easier to serve.
Ingredients For the pesto:
1.5 cups of Italian flat leaf parsley, packed
2 cloves of garlic
Zest from 1 lemon
1 tablespoon fresh lemon juice
¼ cup roasted, unsalted cashews, peanuts, or walnuts
2-3 tablespoons grated pecorino romano cheese
¼ cup EVOO
¼ teaspoon kosher Salt
Fresh ground pepper
For the sandwich:
1 package frozen Farm Rich Italian Style Meatballs
1 loaf high-quality ciabatta bread
1 cup mayo
1 jar of giardiniera (pickled veggie relish)
Sliced provolone or mozzarella cheese
Olive Oil
Instructions
•         Cook meatballs according to package instructions.
•         To make the pesto:
o   Add the nuts to a food processor and pulse for 10 seconds.
o   Add all remaining ingredients except cheese and olive oil and process until everything is well combined, about 10-15 seconds.
o   With the machine running, drizzle in the olive oil and process until smooth.
o   Add the cheese and process an additional 10 seconds.
o   Turn the machine off and taste the pesto
▪          Add more cheese or lemon juice if necessary
▪          If the consistency is dry, turn the machine back on and add 2-4 tablespoons more of oil.
o   In a separate bowl, mix a cup of the pesto with the mayo and set aside.
•         To assemble the sandwiches:
o   Slice the ciabatta into sandwich-sized portions
o   Spread each half of bread with pesto/mayo combo
o   Top with sliced cheese and giardiniera
o   Slice the meatballs in half and layer them atop the cheese.
o   Add more cheese and place the tops of bread on the sandwich
o   Preheat a grill pan or panini press. Brush with oil.
o   Grill each panini for 5-7 minutes or until the cheese is melted and the sandwich is nice and flat.
•         Enjoy!

●        Reduce stress. Yummy foods can cause the body to release serotonin and opiates, creating a sense of pleasure and contentment.
●        Trigger memories. Families, countries, and cultures have their own foods. Even just smelling an apple pie, onions, or spices can resurrect memories.
 When you think of comfort foods, you might think of unhealthy choices that lack nutritional value but make up for that deficiency by making you feel better in the ways described above. But comfort foods are any foods, healthy or unhealthy, that have meaning for you. It’s not about the food, it’s about what the food means to you.
 During the pandemic, many folks have filled their homes with things that make life comfortable—stretchy pants, cozy socks, and comfort foods. These creature comforts are important; self-care is critical, especially in times of uncertainty. Are you looking to add more comfort foods to your table? Here are a few ideas to try:
