Wood Sorrel and Black Cherry “Lemonade”

I was browsing through Porters Seasonal Celebrations Cookbook for the @portersposse First Fruits/Lammas cooking challenge and saw lemonade in the chapter. I’d been seeing recipes for wood sorrel lemonade and as that was one of the plants that I’ve been harvesting all summer I thought I’d give that a try instead of traditional lemonade.

I steeped a cup of dried wood sorrel in 4 cups of boiled water and let it sit while I measured and mixed the ingredients for my Lammas seed cake (probably about 20 minutes). I then added about half a tsp ginger paste, 1 clove, 1 small cinnamon stick and one cup of sugar and left it to steep while I baked the cake.
Once I took the cake out of the oven (an hour) I strained the tea into a pitcher and added 4 cups cold water, 2 TB of black cherry syrup (made with fermented cordial this was strong enough to add flavor as well as color), 1/4 cup lemon juice, 5 dashes of of angostura bitters, 1/2 tsp vanilla, and 1/2 tsp almond extract.

This punch is based on Caribbean sorrel punches—which use hibiscus, not wood sorrel. However by combining the lemony tartness of the wood sorrel with the fruity tartness of the cherry syrup as well as the spices this ended up with a lovely flavor profile.
