Like if you dislike so many things about the way 5e is made just try a different game, there's SO many ttrpgs out there now I'm sure you can find another one that fits what you want

No but, you'd have to plan it. You cant just stop mentioning halflings and expect people to notice. This needs DETAILS.

Maybe every single village and town has a chain bakery, that are all ran by halflings. Maybe they run every bank. Maybe they're all the chefs in the land, or there are customs (2nd breakfast, perhaps) that are only there due to the halflings ("well, its a bit weird, but they're so nice that we started having 2 half-breakfasts to help them relax").

Then they're gone.

The Baker is suddenly a human, or an Orc, or an Elf.

The bank is run by Goblins that are definitely pilfered from popular fiction.

Chefs come in all different shapes and sizes.

Everyone still eats 2nd breakfast, but noone can explain it.

Don't just remove halflings... REALLY gaslight your PCs.

Remove halflings from the setting halfway through the campaign and see if anyone notices.
