There is this weird misconception in the fandom that just because Sanji doesn't like to waste food that means he would also eat rotten food or use rotten ingredients. Which doesn't make sense because a chef who respects the people who are gonna eat his food would never do that and risk getting them ill.

Anyway the manga also doesn't support this weird headcanon. Here is a scene where Sanji actually throws out rotten sauce:
