Samgyetang (Korean Ginseng Chicken Soup)
Samgyetang (Korean Ginseng Chicken Soup) will help you regain your energy! In Korea, it's a popular summer endurance food.

Ginseng chicken soup (Samgyetang in Korean) is a hot, steaming, delectable dish that consists of a small chicken stuffed with rice, ginseng, garlic, and jujube. When you sit down for a bowl of samgyetang, you must commit to eating a whole chicken by yourself! But it's completely worth it.
This dish is usually eaten by Koreans during the hottest days of summer to keep their energy levels up and to balance their body heat with the outdoor temperature. Yi yeol chi yeol (: ) is a Korean proverb that means "fight fire with fire." If it's hot outside, you'll need a hot soup to cool down!

Recipe
The stomach of a gutted chicken is filled with glutinous rice, garlic, and jujube wrapped in clean cloth, which is then boiled in a kettle with plenty of water until the flesh is fully cooked. Ginseng is wrapped in a cloth and placed in soup; the ginseng ingredients are thickened, and the broth is seasoned with salt to consume only the soup, or seasoned meat in the soup. When ginseng is blended with glutinous rice and placed in a chicken, however, the ginseng nutrients enter the chicken bones, lowering the ginseng nutrients. It's also eaten with poison ivy, cedar, and abalone, in addition to ginseng. Some people believe that jujube should not be eaten because it absorbss the harmful chemicals in Samgye-tang, but this is not true.
Although it is considered standard to use young chicken and 6-year-old ginseng as ingredients in Samgye-tang, many restaurants cannot easily find these ingredients and instead use Ungchu or 4-year-old ginseng as the cost of ingredients rises. In fact, some people believe that four-year-old ginseng is fine because saponin, the active ingredient in ginseng, isn't much different from six-year-old ginseng. Some companies use ginseng for one to two years before replacing it with Astragalus propinquus, which tastes similar.
