How about flavouring your Lembas with some spices to acchieve some variety? Here are some ideas what you could mix into the dough:

Vanilla-extract

Lemon or Orange-peel (make sure the fruit are ecological and have not had chemical treatment. If you are insecure, please ask one of the shopkeepers, for not every fruit’s peel is made to be eaten!)

Cinnamon

Orange-blossom extract (you may get this in an oriental supermarket)
