The BBQ king again the misses wanted a roast... she got one! But the condition was, it had to be barbecued! Cauliflower cheese was amazing idea as I decided to play with flavour.... glad I did! 300ml whole milk... corn flour, 1 tablespoon paprika, a few sprigs of saffron, garlic granules, salt and pepper, then cheddar cheese and mozzarella. Very good! Anyway, chicken with a beer can up the ass, I used a stout to warm our cockles up as the evening got cooler... smoked with apple wood, bay leaves and sage. The roast pots were Maris pipers... boiled and then on the bbq with thyme, sage, garlic, butter, Rosemarie... Broccoli and carrots steamed... Bread sauce... yorkies... and sage and onion stuffing... Chris here... Tonight we had, giant Cous Cous... with lamb and Halloumi marinated in cumin, herbs, garlic and some paprika and of course bay leaves... button mushrooms, broccoli, onions, more garlic and shallots... served with a pita bread... was delightful. Another by one of our greats Spot of scrambled egg on toast for breaky... rather delightful. The key is, butter into the pan, add your eggs whole and stir and break as they cook... take off the heat after 30 seconds, put back on after 30 seconds etc until cooked, add a teaspoon of creme fresh, and season with salt and pepper at the end, other wise that will make moisture come out during cooking and go nasty. It will be like cooking them with a puddle of water... I’ve used this technique for several years and am stuck in my ways but what do you do?
