If you want to get your players to use consumable items, here are the top 3 things that get me to use consumables:
very limited inventory
very high difficulty without them so that they're basically mandatory
very easy to replenish

does every1 know about how every font in Pentiment was custom-made for the game and different characters speak in different fonts depending on their standing in society. theres no voice acting but theres a pen-scratching sound that accompanies dialogue. peasants/townsfolk speak in a handwritten script. the monks all speak in intricate blackletter script. the town printmaker's dialogue has its own font and makes a clunking sound like wood blocks or a printing press. Sometimes someones font will change mid dialogue as you learn about them and their life. the dialogue writes itself out and looks like wet ink for a second before setting into dry. there are even intentional imperfections. sometimes there will be typos that sit there for a sec before being scratched out and corrected. the ink visibly bleeds a little bit where the correction was made. did you know this

 If I ever end up DM:ing for a DnD party again, I’m going to allow the players to give their characters extra points in their stats in exchange for, like, absurdly stupid weaknesses.
 Being allergic to magic. Being incapable of making a rhyme on purpose. Having the compulsive urge to steal forks. Being straight-up immune to a certain kind of spells due to a botched blessing. Botched blessings of all kinds, really. The kind of shit that makes the players think “lmao this will never actually happen in a game.”
 Then I design a campaign that will absolutely involve all of their weaknesses.

Why a Nat 20 shouldn’t be an automatic success
Some people tell you a Nat 20 on an ability check should make you succeed on the thing no matter how unrealistic, others think you shouldn’t even be allowed to roll on unrealistic things. I would like to tell you my opinion on this:
According to RAW, the Nat 20 on an ability check doesn’t mean anything. However, it does mean something on an attack roll. However, if you think of “Sword attack” as an ability check and the goal being “Kill the Dragon”, then a Nat 20 isn’t an automatic success. It just means you made the most possible progress towards your goal, slaying the dragon, by dealing an increased amount of damage. And I think a Nat 20 on an ability check should be treated the same. Yeah, you can’t seduce the Dragon while fighting it, not even with a Nat 20, but this Nat 20 might mark the moment where the Dragon started considering it for the first time. You can’t punch through the stone wall, not even with a Nat 20, but this Nat 20 might mean that you break off a decent amount of wall.

If you like my ideas, you might also be interested in my homebrew found at DMs Guild! Here is all the stuff I have published there at the moment:
Abyssal Tieflings allows you to create a Tiefling character that gains power from a Demon Prince, instead of a Lord of Hell. 
Alternate Level 20 Features gives you alternative, less boring features for level 20 for many classes
Eldritch Invokations for every Warlock Cantrip lets you create powerful Warlocks that aren’t just Eldritch Blast machines
Mixed Races has many new races like the dwelf (dwarf-elf), the nephilim (Tiefling-Aasimar) or the Smoke Genasi
Oath of the Revolution is a Paladin subclass that lets you build a character who fights for freedom and against oppresion
Spooky Character options let you play an Animated Jack-o-Lantern, or a Cleric of the Spook domain, dedicated to spooking your enemy. A bit out of season, I admit
The Archivist is a class all about knowledge. The subclasses focus either on Psionics of Arcane.
The Young God Patron binds your Warlock into the service of a god who is still trying to establish a following
