Heirloom Tomato & Chicken Toss
This is one of my favorite recipes right now. This recipe is quick and easy, utilizes summer season produce, is healthy and is a great meal prep option.
Ingredients
4 tablespoons white wine vinegar
3 tablespoons extra-virgin olive oil
2 1/2 teaspoons granulated sugar
1 1/2 teaspoons kosher salt
1/2 teaspoon black pepper
3 cups shredded cooked chicken
2 pounds heirloom tomatoes, cut into 1/2- to 1-inch wedges
1/2 cup thinly sliced red onion
2 tablespoons chopped fresh basil
2 tablespoons finely chopped fresh chives
2 tablespoons chopped fresh flat-leaf parsley leaves
1 tablespoon chopped fresh thyme
How to Make It
Whisk together vinegar, olive oil, sugar, salt, and pepper in a small bowl. Gently toss together chicken, tomatoes, onion, basil, chives, parsley, and thyme in a large bowl. Add vinegar mixture, and gently toss until thoroughly combined. Serve immediately, or cover and let stand at room temperature for up to 1 hour.

Welcome
Hey all!
My name is Erika Pickard and I am a Junior at the University of North Florida. I am Child Psychology major with a Public Health minor and plan to work in the health care field post graduation. I have always been very interested in two things: food and finding a good deal. I have decided to combine my two passions to help my fellow peers and myself become accountable for how we are fueling our bodies. What you eat has a direct impact on the way you feel, preform, concentrate and look. Eating healthy has developed a stigma surrounding it, healthy food = unaffordable and thus unattainable. I aim to provide my readers with suggestions for shopping lists that include locally grown, in season, affordable food items. I will use the items I list to create recipes that are accessible, quick and convenient for students who often don’t even have the time to sit down to enjoy a meal. I think it is so important to educate my fellow peers to create a happier, healthier, more productive surrounding for myself and others through the use of food.
